Our family gathering had 6 turkeys all seasoned/cooked differently. SIX! Everyone picked the pieces and parts they liked the best and it left a variety of morsels in each pan.

I have a couple of ideas of what to do with the leftovers... sandwiches or maybe soup.

What about y'all? What do you do with the leftovers?

our family made one turkey, ate leftovers for dinner yesterday, and it is GONE! However, our family's favorite way to eat leftover turkey is:
Turkey and Wild Rice Soup

2 T butter
1C sliced celery
1C shredded carrots
1/2 C diced onions
1/2C bell peppers (I like using red for the contrast in colors!)
2 cloves garlic, minced
Salt and pepper to taste
3T flour
1 1/2 C cooked wild rice (I use brown if I am out of wild)
2 1/2 C chicken or turkey broth
1C half and half
2 C shredded or cubed leftover turkey
1/4C chopped fresh parsley

In a medium saucepan, melt butter. Sauté veggies until tender, about four minutes. Add garlic, salt, and pepper. Once fragrant, stir in flour. Cook and stir for two minutes. Add rice and broth. Bring to a boil, then reduce heat. Cover and simmer for fifteen minutes. Stir in turkey, half and half, and parsley. Heat through and enjoy :)

I also like to make chicken pot pie, but with turkey :)

Turkey Chili

This is more of a how to than a recipe. Use your favorite chili recipe. Begin by 'blooming' the spices or pkg chili mix in a little hot oil of choice. Sauté diced onion & garlic in spice oil - add shredded or diced turkey - mix to coat with spice oil & onions - precede with your recipe as you would if using beef or pork.

'blooming or bloom' - to heat spices until raw taste is gone - by the time you begin to smell the spices they're ready for the next step. Be careful not to burn them.

My two turkey leftover favorites are turkey noodle soup and turkey noodle casserole.

For the turkey noodle soup - it has diced onions, carrot, celery and garlic in a turkey stock (made from the carcass) and seasoned with herbs de provence. I also add a cup of chardonnay (or other dry white wine) and that gives it a nice little flavor boost.

For the turkey noodle casserole - basically the same concept as stove top tuna noodle casserole, but I like to season it with thyme and add in diced scallions and sun dried tomatoes.

We keep it simple and just reheat the leftovers and have another turkey dinner. Sometimes we also make sandwiches out the turkey, rolls, and cranberry sauce. We never seem to have a ton of turkey left over to make a big deal out of, so a simple reheat works best for us.

I also make potpie or hash with my leftover turkey. Last night's potpie was such a big hit that my family requested for a repeat tonight, then that's it, we've polished it off!

I am still working off the very last of leftover turkey meat we froze during the holidays.

We also really enjoy Turkey Mushroom Bacon Puff Pastry Pockets! I usually plan to have those a day or two after we cook the turkey but you could make with frozen turkey meat too.

Another tried and true way we use it up is by making Turkey Paninis and there so many ways to jazz them up, but we usually just do the meat, a sharp cheese and maybe a little mayo.
