The bakeover is such a great creative outlet, but some days I am just too tired to think about what to put in. Could anybody help me out and pass along some of their favorite creations?

I just did a bakeover that was a huge hit and it was totally by accident! I was using up some left over scalloped potatos, and I added left over cubed ham to it, then I added cheese to make it stick together but I started running out so I scrambled some eggs into the mix as well.. then I added some torn up spinich, diced onions and broccoli, over a buttermilk biscut bottom/top... and it came out tasting just like a perfect quiche... I've never made quiche before and I'd probably ruin it if I did, but this was great and really easy.

I read about the bakeover in MaryJane's book and was very drawn to it, since I prefer one-dish-cooking. I haven't tried it yet, wanted to get the right skillet first. Have you done it in the skillet she uses? Have you tried it in any other pot, pan, or such? Bobbi, your concoction sounds so delicious! I love the idea because I actually DON'T like to follow recipes, but rather "throw" things together.

I just did mine in a plain nonstick deep dish pan... the one I usually use to boil lots of noodles, or make chili.

I did my first bake-over tonight (well kind of). I don't know if this would be considered a bake-over or not but I had some left over beef stew and made the crust from the recipe in the MJ book. It was good but the top of my crust cooked too much and it was still doughy where it was next to the stew. I cooked for 20 minutes so I obviously need to cook longer but will need to cover with foil or something to keep it from browning to quickly. I've been reviewing some of the recipes for bake-overs here but do any of you have any new concoctions you've come up with? I posted in another thread that I'm a recipe cook not a creative cook but I love the idea of the bake-overs.

I made my first BakeOver tonight and it turned out great! I used potatoes, corn, carrots, and roast beef meat. I used the BakeOver crust recipe that's in MJ's book... My fiance, who is EXTREMELY picky, really liked it! We have a new addition to our menu!! YAY! (I'm so proud of myself because everything I make usually fails miserably the first time!)
