Canned 7 pints of beef broth today and that one pesty lid did not seal.

Canned up 11 quarts of pretty maple syrup. It was a fast cook and the syrup is a lighter color. The darker the color the more flavor, but this is still so good.

I made chicken broth yesterday in hopes of canning today but I woke to MS fatigue so it's plan B. If the fatigue lifts by tomorrow I will can in the morning.

Sometimes our bodies change our plans #129394;. Take a long nap and see what tomorrow brings. I don't have a big pressure canner so I freeze chicken broth.

I have an electric pressure canner that holds seven pints. I don't remember how many quarts because I just do pints.

Canned 7 pints of chicken broth today and they are sealed. Midway in the canning process E10 flashed on the screen. Looked it up in instruction manual and it said the process had been interrupted. Told me what to do and after a brief time it was fixed and I restarted my canner. Computers are great until they go haywire.
Must be something in the air while I was having problems with my canner my delivery order was rescheduled because the grocery store's computers went down.

A computerized canner? I didn't know there was such a thing. Does that mean InstantPots are computerized too?

My electric canner has a digital screen so I such assumed it was computerized.

Michele - if you don't mind me asking, how many taps do you have to get that much syrup? I have 3 taps this year. First time ever!!! I only have 1 pint jar sealed up. I have 2 of the 12oz maple syrup jars in the fridge. The rest I've been using as fast as I get it made. I know it all depends on the weather but I didn't keep any records to try and determine how many taps would be good for just our use. I visited a place that has 1400 taps and lines and WOW! Way too big for me but really neat to see.

Heather as a guess you can go by the 40 gallons of sap to 1 gallon of syrup. So if you wanted 3 gallons of syrup, you would need 120 gallons of sap. Type if tree will vary the ratio, and weather. There is no sure fire way of knowing from year to year. We tap all hard maples. If you do a little or a lot, it is just plain good to have on the breakfast table. We do run 60 taps and we use buckets. We haul out of the woods in milk cans. That first batch we had 125 gallons about of sap. We do use a small RO system, which took out about half the water. That shortens the cook time, which is nice. There is no taste difference to us when using an RO. We cook outside with wood. We will cook on Sunday again, and my husband said this time we got more sap out of the RO, then water. The first batch was more water then sap. It varies too, as the season progresses. It is just a neat process, and good to have on the canning shelves. And if you needed it, you can always make sugar out of the syrup. Happy Syrup making.

Judith, an RO is Reverse Osmosis. A system of 4 filters that separates out the water and the sap. When making syrup you are boiling off the water, until you have a nice syrup.

Thank you Michele -- I knew about cooking the sap but I didn't know about using reverse osmosis for the process. It sounds like it saves time and energy.

14 quarts and 1 pint of syrup canned and sealed. We cook outside in dutch ovens, over the wood coal. Yesterday we made biscuits and gravy casserole, Indian fry bread, and a peach crumble. The other staple when cooking sap is beer. We did get done outside about 10 minutes before a thunderstorm moved through.

Michele it all sounds so wonderful.! And you cooked your meal outside it sounded so good so I know it was delicious. A lot of work but well worth the effort I am sure. Thanks for sharing.

Great timing Michele! And your meal sounds delicious. We pulled our 3 taps yesterday. The little bit of sap that came out was cloudy and it's not supposed to be below freezing again anytime soon. Thanks for the info. Depending on the weather it sounds like 15-20 taps might work well for me. I will need an upgrade on the boiling equipment though LOL! I just used a roasting pan and a turkey fryer. A wood fire and a big pan would be much better!

You want to hear my sad canning story, well here it goes. Yesterday I canned 7 pints of Chiapas black beans from the State of Chiapas in Mexico. Four jars did not seal so I will make black bean soup out of 3 of the pints and black bean salsa out of the 4th.
The only thing that makes sense to me is while I was filling the jars I noticed my right hand had become weak, so I figure I just didn't tighten the four unsealed jars enough. Things like that happen to me all the time, one minute my hands are strong and the next they are weak. Never know when some part of my body stops working.

Sara -- Were you using a new box of lids? Sometimes it is possible to run into a bad batch that doesn't want to seal.

Over the weekend my mother-in-law, sister-in-law, and I canned 120 pounds of chicken. So we ended up with 40 pounds each. It was my first time canning chicken and I really learned a lot. I definitely underestimated how time consuming it is, but it's worth it. This canned chicken is way tastier for chicken salad sandwiches.

Hope you feeling stronger Sara. Four jars not sealing is tough, but at least you got soup. Krista, way to go on canning chicken. We love canned chicken, so easy to use in so many ways. Cooked syrup again yesterday. Got 12 quarts and 1 pint. The season will end soon, as the trees are starting to bud. Going to turn cold again, so will see what happens.
