Canned two hams, they were on sale at the store, ended up with 17 quart. Jam making this week, strawberry, strawberry rhubarb Yummy.

I am looking forward to it. I know it may sound crazy but there is something about going to the canning shelf and pulling off a meal; it is Work but so rewarding.

I know what you mean. Yesterday I opened a pint of Yellow Indian Woman beans. The beans were very good and I had the joy of remembering the day I canned them.

That sounds delicious! I have not canned beans yet, today was canning chicken, again a meat sale. Spend summer days planning for winter.

Last weekend I made apricot salsa which was a first for me and was delicious . Tomorrow I am making apricot sauce and apricot jam.

Apricot salsa sounds so good. It'll be great with pork and chicken. Apricot jam is my favorite jam.

Pressure canning four pints chicken broth. Had exactly four pints - don't you just love it when there's not that little dab left over.

Over the next several days I'll be canning dried beans; I found ox-tails in marked down bin so it's ox-tail beef broth one morning; chicken thighs for 39 cents a lb so chicken broth one day. Annie loves it when I cook broth because she gets the beef bones and chicken thigh meat. I'm strictly a white chicken meat gal.

Today I am freezing mustard greens. I like frozen veggies better than canned. Plus I hate to use a pressure canner. What are you canning lately Sara? Are you still on the dried beans.?

Still on the dried beans. Have two new kinds coming from Amazon - lady cream peas and cannellini. I only can several days a week so I can get other things done. Now with temperatures reaching triple digits I have to start canning before sunrise because my Yellow Rose Cottage doesn't have A/C. Must say early morning is my favorite time of the day.

Today I am canning curry pickles and freezing fresh picked chanterelle mushrooms. Me and my pack of dogs went mushrooming up a little holler I had never been up---there was a light rain falling and it felt great. I found a huge patch of them and it was a beautiful sight---bright orange. I gathered two plastic grocery bags full and they were heavy---I fell in a muddy place and busted my butt good---still great fun. I also found parts of the old trail that my grandfather rode my mom to school on their horse---sometimes she walked. I could kinda feel them there with me. I do love my life in the woods!

Barbara your curry pickles sound tasty. Enjoyed hearing about your forging for wild mushrooms. Quite a boundary.

I'm not canning until it's cooler but that doesn't mean I'm not getting ready to can. My sister gave me six corn on the cob. I no longer can eat corn so I cut the kernels off to give another sister for her freezer. I froze the cobs to make corncob broth to can in Oct unless it cools down sooner.

Fermenting pickles and doing apple pie filling. My Sept apples are now ready. ARGH. Don't anyone dispute global warming with me! The Pacific NW is getting hotter and hotter.

Sara,
Spent years canning the pie filling using Clear Jel. Now that it's going to be high 80's and will reach 90º, no canning. I'm freezing the pie filling. I'm making two pies at a time and my Nesco vacuum sealer. My apple tree went nuts this year with gobs of apples. Will make apple leather, apple pie jam and applesauce before I go nuts and call it quits.
It's all worth it come winter. Enjoying summer's harvest is awesome.

Sylvia to have your own apple tree must be wonderful.

Have you tried drying apple slices to use on holiday garlands and wreaths. I did one year and it was fun. I may dry some this year to hang for the birds. Smear the apple slices with peanut butter & cornmeal mixture. Need the cornmeal to keep the peanut butter from getting all over the bird's beaks and feet.

I will be canning a bushel of White Half Runner beans next week if all goes well...Love having fresh vegetables that will be so delicious this Winter...

I have canned salsa, apple sauce, apple pie filling, dill pickles, picked okra. I have been really stressed so canned all this to help the stress stay at bay.

Judy - happy canning.

Kelly you have been busy. I understand about how canning can help with managing stress. I find peace when I keep my hands and mind busy preserving food.

My canning is still on hold until much cooler weather. While I'm waiting I am replenishing my canning supplies and looking for new recipes to try. So when I'm not canning I am thinking about it.
