Connie, your canned turkey stock is beautiful and it sure will be good this winter.
If you promise not to laugh I'll tell you what I have put up. One pint of spiced/pickled peaches. And to tell the truth I didn't can it ~~~ the peaches are in the fridge. I've got a glass top stove so my canning days are over except for small batches to be kept in the fridge.

Sara, I did set up 1 quart today of pickles with a fermentation lock. It's the first time I am trying this, and I'm not canning them. I usually just make pickles the regular way. Fermented food is so good for you. I am just going to put them in the fridge when I am done. I am also currently fermenting a large crock of sauerkraut.

So far I have done strawberry jam and peach preserves. For some reason my preserves did not set up very well.
Waiting for the beans to get my dilly beans done and then whatever else we can get from the garden things.

Connie the spices I used for the spiced/pickled peaches were all whole - cardamom, all spice, star anise, cloves & thin sliced fresh ginger. I looked at a couple of recipes than pretty much used what spice I like with peaches. I'm not much on following recipes to the letter. (that's way I'm not a baker)
I like the way the peaches turned out. A little tangy from the ACV and just enough spice to suit me. The ginger is so good. I may play around with making fresh ginger with spices & ACV.

Berries are in season here, so I am making my famous wineberry (like wild raspberries) jam. I am also starting to do dill pickles, a favorite that we run out of every year. Sara, I'd like to do spiced peaches this year. Sounds good.

I did 15 quarts and 4 pints of zesty dills this week -very garlicky and hot the way we like them.

Got 8 pints of string beans in the canner as I type! haha. Didn't feel like doing them after work, but when they are ready. my year starts out with canning maple syrup, then I did chicken stock, made some jam from freezer berries, and made cranberry sauce and jell.

So far, 11 quarts of dill spears, about 15 pints and half-pints of picallili, 20 pints of peach jam, 24 of peach butter,8 quarts and 8 pints of shrub(drinking vinegar) in strawberry, ginger-peach and cardamom peach.
Also prepped and froze about 35 pounds of peaches,15 pounds of rhubarb,10 punds of blueberries,and a bunch of soups and beans.
Love putting food up! |

For anyone else that might be interested: (it's a recipe I found on the internet a while back)
DILLY BEANS •5 pounds fresh beans {green, purple, yellow or a mix} •6 cups of vinegar •6 cups of water •1/2 - 1 cup of salt •whole garlic cloves •peppercorns •fresh dill or dried dill •fresh chili peppers or dried chili flakes
1. Wash up the beans and trim to fit your jars.
2. Heat vinegar, water and salt in a pot to just before boiling.
3. Place one garlic clove, one chili pepper (or 1/2 tsp dried), a few sprigs of dill (or 1/2 tsp dried) and several peppercorns into each hot sterilized jar.
4. Pack jar with trimmed beans and fill with vinegar mixture leaving 1/2 inch head space.
5. Process in a boiling water canner for 5 minutes (adding additional time according to altitude in your area.)
Note: If you don't have 5 pounds of beans, don't fret! You can easily pickle and can what you've got using the 1 cup of vinegar to 1 cup of water ratio-- it works just the same! Sometimes I might only do 4-5 jars at a time.
Processing time for Pickled Dilled Green Beans in a boiling-water canner.
Process Time at Altitudes of:
0 - 1,000 ft 1,001 - 6,000 ft Above 6,000 ft 5 minutes 10 minutes 15 minutes

Connie! Thank you so much for the recipe! I had forgotten about dilly beans! Now I know what to do with that big bag o' beans I just picked! :)
So far, I've canned chicken, peaches, and sweet pickle relish. I'm going to do pears tomorrow (not quite ripe enough today), then I've got a big bowl full of potatoes to can, and, finally, a freezer full of tomatoes to tackle at the end of the week for sauce, salsa, and, if I have enough, I'm going to try ketchup, too!

I have canned 8 quarts tomato juice and did 4 sour kraut. Tonight I picked a canner full of elderberrys. Time to get making juice for winter.

Connie! I have that book! I love it! I have all of Jackie's books... I think... I'm pretty sure! Our farmgirl sister Lisa a.k.a. nubidane insisted I get her canning book (probably after I badgered poor yet patient Lisa with a zillion canning questions, LOL! God bless her!), so I did. Since then, I've managed to collect every one I can get my hands on, as well as some she strongly recommends! She's incredible! :) I just need to remember to actually USE them more often. Sometimes I get so busy I forget to peruse her pages before I get crackin'. SO many wonderful recipes, SO much invaluable knowledge! Thank you for the reminder!!! Hugs - Nini

Another 7 quarts of green beans. Trying to can is a challenge nowadays because the big burners on my stove(electric) are temperamental. Soooooo frustrating to be able to get through the process time! That's one reason why I'm not doing a lot of canning, either with pressure canner or water bath canner these days. But these are done and I'm thankful! CJ

So excited to find a group of canners! I've done several things so far this year:
Strawberry Lemonade Conentrate - 5 Pints Blueberry Pie Filling - 3 quarts and 1 Pint Almond Mango Blueberry Sauce YUM! - 3 Half Pints Blueberry Lime Jam - 6 Half Pints Black Forest Preserves - 7 Half Pints (1 eaten already!) Danish Cherry Sauce - 7 Half Pints Asian Plum Sauce - 3 Half Pints Peach Jam with Lime - 5 Half Pints Sparkling Sweet Pepper Jelly - 7 Half Pints "Pineapple" Zuchinni (Tastes like crushed pineapple!) - 9 Pints
And I've also put up about 7 gallons of Refrigerator Dill Pickles!
Hoping to do a round of canning of all things apple later this fall! Also have some other sessions planned using frozen berries! |

Danish Cherry Sauce
This is a perfect compliment to cheesecake, or try spooned over angel food cake cubes/slices.
Makes about 3 pint (500 mL) jars (I got 7 half pints)
1.5 cups granulated sugar 3 cinnamon sticks (each about 4 inches) 1.5 tsp almond extract 1 cups water 3/4 cup corn syrup 7.5 cups pitted sweet or sour cherries
1. Prepare canner, jars, lids, etc. 2. In a large stainless steel saucepot, combine sugar, cinnamon sticks, almond extract, water, and corn syrup. Bring to a boil over med-high heat, stirring constantly. Reduce heat to gentle boil. Add cherries and boil gently, stirring, until heated through. Discard cinnamon sticks. 3. Ladle hot cherries and syrup into hot jars, leaving 1/2 inch headspace, if necessary, by adding hot syrup. Wipe rim. Center lid on jar, screw down, etc. 4. Place jar in canner, bring to a boil and process for 10 minutes. Remove canner lid, wait five minutes, them remove jars to cool and store.
TIP: To thicken this sauce before serving, combine 1 T constarch and 2 T water in a saucepan. Add 1 pint Danish Cherry Sauce. Bring to boil over med-high heat and cook, stirring, until sauce thickens - about 2 minutes. Do not add cornstarch before canning. |

I'm going to do some research to see if I can find a variation on the recipe that calls for adding ClearJel - so that it is thick in the jars and doesn't require the thickening step after opening.
And I forgot to list that I did 8 quarts of Cherry Pie Filling earlier this year too. THAT was an experience!
