Tonight I made my first BakeOver using MaryJanes organic cornbread mix and a mixture of veggies in my fridge. So easy and so delicious!! I think some of you have mentioned making these easy one pan meals and recently, MaryJane blogged about some uses with her OutPost products. What was I waiting for??



My BakeOver included some ground beef, one yellow squash, one potato, 3 handfuls of fresh spinach, a little grated cheddar cheese and the cornbread mix as the top crust. Bake for 20 minutes at 425 degrees and turn on a plate. The recipe is 4 cups of veggies with anything else you have or want like meat and cheese plus one package of her mix or a recipe using her Budget Mix. Next up? Making a dessert with the orange walnut scone mix and 4 cups of fresh fruit. Mmmmmmm!! And, there are leftovers for lunch tomorrow. Sweet@!@

Probably my two favorite BakeOvers. We always have beans, corn and cheese around and we always have apples. What mouth-watering photos!

The other BakeOver I make once in a while has shrimp, bell peppers, chili pepper flakes, and coconut milk/cream using Chillover as a thickener and the cornbread crust that Winnie used in hers.

Ohhh, Star, that apple BakeOver looks divine! Seriously delicious.

MaryJane, I plan on trying many of the recipes in the magazine show in my photo as it has such great ideas. I plan on using some of the Budget Mix I ordered as well to make the crusts.

I made a BakeOver last night using the last of my red homegrown potatoes, the last of my homegrown broccoli, the mushrooms I had left in the refrigerator, and leftover ham from Christmas (frozen of course). I used MaryJane's garlic pesto fry bread on top. After I flipped it over I sprinkled it with shredded cheese. It smelled so wonderful I quickly had 16 legs in the kitchen with me (2 dogs, a cat, my daughter, and my partner). It tasted as good as it smelled.

This morning I made a breakfast BakeOver. It's almost an upside down quiche.

I used half a package of meaty bacon (chopped), half an onion (chopped), 4 farm fresh eggs (scrambled), and a handful of grated cheese. Cook the bacon and onions together until bacon is nearly done, drain fat. Add eggs and cook about halfway done, mix in cheese. I used MaryJane's griddle cake mix on top. Sprinkle maple syrup mix on top of egg mixture. Add enough water to griddle cakes to make mix pourable, but not runny. Pour griddle cakes over egg mixture and spread evenly. Bake at 350 degrees for 20-25 minutes. Flip onto plate and enjoy.

I love Bakeovers! They have become a "staple" at our house. I love to make the ones in the Baking issue, and also make up combos. I have never tried a breakfast one, either...Sherrilyn, what a great idea! YUM! Wish I would have done that yesterday while we were digging out of the snow. ;)What a great brunch idea, too!

The griddle cake mix is almost enough to make 2 smaller BakeOvers. My partner ate half of the thing in one sitting. Needless to say, he approved. More breakfast experiments coming soon. :)

I have been going to town trying the different mix's I got from MaryJane's and making BakeOvers for every occasion. Last night was chili BakeOver with focaccia bread. I used organic grass fed hamburger, a red onion, chili powder and other herbs to taste, canned diced tomatoes, canned beans (black, pinto, & red). Everything was organic of course. I used some organic non-GMO cornstarch to thicken it. It was soooooo delicious!!!! I am going to make another one this Sunday for the game.

I also made a BakeOver dessert of papaya, my own frozen strawberries, unsweetened coconut, a bit of honey, organic non-GMO cornstarch to thicken it and MaryJane's brownies on top. We topped it with a little organic ice cream and had a very satisfying meal.

I have three mix's left, so stay tuned for the next BakeOver experiment.

My BakeOver for our chapter meeting tonight contains turnips, sweet potatoes, rutabagas, parsnips, smoked British bacon (from my local butcher, low fat and no nitrates), and white sauce topped with baking powder biscuits. It was all I could do not to eat some while I was cooking it. My mouth is watering just thinking about it.

British Bacon - the store - is located in Auburn, WA and Port Orchard, WA. They are a local meat market that specializes in British style pork. British bacon looks like thinly sliced boneless pork chops, rather than the more fat laden American bacon. I love the smoked version for BLTs, quiche's, and breakfast in general.

It turned out wonderful! We had the best meal at our meeting. Sylvia made a fabulous soup and salad, and a herbed pull apart bread. I brought the BakeOver and Chocolate Moooos. We ate, tatted, and laughed until we nearly cried. I haven't had that much fun in a long time.

Most of the ladies did not seem to have had all of the different root crops before, and since they are currently in season, they are at their peak flavor (available at my local organic farmstand as well). I first tried all of them roasted with lamb, and fell in love with them as an addition to potatoes.

Life is good.

I am enjoying your bakeover posts ladies. You are giving me lots of ideas. May do a variation on that breakfast one in the morning... practice it for Easter morning breakfast... just finished seasoning all my cast iron about an hour ago... routine every 2 to 3 months. I have a bell pepper, some baby Bella mushrooms and sausage I need to use up and I made a couple extra baked potatoes tonight for supper.
I made my first bakeovers a week ago Friday. A gluten free one (the G. F. Budget Mix with 1/2 cup of sugar added) made up like a cobbler topping and poured over strawberry-rhubarb filling I put up last year. My son was so impatient we didn't quite make it to the "over" part .... does that just make it a bake? He just scooped a big helping out of my cast iron skillet into a bowl and ate it. The rest of us had blackberry-peach one,added a little almond extra to that filling and some oatmeal to the crust mixture. I really need to find a nice serving platter to flip these things over onto.

Our family favorite is having hamburger, corn, diced tomatoes, green chilies, onions and pinto beans with taco seasonings with cornbread on top. We also liked a cherry pie filling with brownie mix on top.

I love my pan. Make sure the plate you have to turn the BakeOver onto is at least slightly larger than the pan or dinner will hit the floor, and flip over the sink just in case things don't go as planned. (I have the t-shirt...lol)

I recently bought an old cast iron "chicken fryer" pan that is deeper than a traditional skillet. It'll be great for making bake-overs. I can also use it to make deep dish quiche and fritattas (sp.)Can't wait to use it!
