It will be strawberry time in a few months here I North Carolina. I can the fresh picked strawberries into jam. My problem is my daughter is diabetic and the last time I made sugar free jam it was very loose and not jam like. Can anyone help? Maybe a better recipe or trick to making sugar free jam? I would appreciate any help. Thanks so much

When I made strawberry jam I simply did not add any sugar. it was delicious and sweet enough.

Connie,
Did you just mash the strawberries and add the pectin? Did you have to boil them. I need to find a sugarfree recipe. I did peach butter that way but I just cooked the peaches down in the crockpot no pectin.

Denise I just mashed them and cooked them down. I didnt add pectin either. It was one of my best jams. cant wait to make more.

So it probably came out like my peach butter did. I really let that get broken up so there are not many pieces of peach just pulp. I am going to be trying this as soon as the strawberries are ripe for picking here. Usually the last week of May. Thanks so much for the information.
