My sister sent me this recipe and it is AWESOME.

Ingredients

1 pumpkin, about 3 pounds
salt
ground pepper
1/4 pound stale bread, thinly sliced and cut into 1/2" chunks
1/4 pound cheese - Gruyere, Emmenthal, cheddar or a combination - cut into 1/2" chunks
2 - 4 garlic cloves, split, germ removed, coarsely chopped
4 strips bacon, cooked crisp, drained and chopped
1/4 cup snipped fresh chives or sliced scallions
1 tablespoon minced fresh thyme
1/3 cup heavy cream
Pinch fresh ground nutmeg

Center rack in oven. Preheat to 350 degrees F. Bake on silicone baking sheet or parchment or in a Dutch oven big enough for the pumpkin. Cut cap off pumpkin far enough down to easily work inside it. Clear seed and strings from the cap and insides. Season inside generously with salt and pepper. Put it on the baking sheet or Dutch oven. Toss bread, cheese, garlic, bacon and herbs together in a bowl. Season with pepper and pack the mix into the pumpkin. Pumpkin should be full more or less. Add or subtract if necessary. Stir the cream with nutmeg, pepper and salt and pour it into the pumpkin. Do not let ingredients swim in the cream. It just needs to be moistened. Put cap on top and place in oven. Bake for 2 hours or until everything inside is bubbling and flesh is tender enough to easily pierce with the tip of a knife. Check it after 90 minutes. If desired, remove cap for last 20 minutes to bake away liquid and brown the top of the stuffing.

Serve by cutting into wedges or pumpkin and filling or mix the flesh with the stuffing and spoon out. Store right away in the refrigerator.

You can substitute rice for bread. I used crumbled crackers. Other vegetables such as cooked spinach, kale, chard or frozen vegetables may be used. Try using other fatty meats or nuts and chunks of apple or pears. I used fried tempeh instead of bacon.
