I made the Ball Canning recipe for beef stew. It darn near filled a 32-quart canning kettle when done. Which is A LOT!
My pressure canner can only hold 7 quarts, and it's currently working its way up to pressure for the 1st batch of jars. I have at least 8-10 more quarts after that.
Since everything has to be hot when it's being processed, do I just reheat the stew to boiling when the pressure canner is done and the steam released? After doing this another 2-3 times, won't that affect the product that's going into the jars (ie, mushy potatoes and carrots)? Should I put everything into jars (w/o the lids)and keep it in a warm oven until I'm ready to use it?

I think I would leave them uncovered in hot water in the sink or something like that. I wouldn't put it in the oven unless you are taking it out of the jars.
