I am currently in love with sweet poatoes (I got a great deal on a 40lb box of local organics). The past week I have made sweet potato cobbler 3 times and my kids still can't seem to get enough. It is sweet(but still nutritious) and filling and makes a great breakfast! Make it in a well seasoned cast iron and go strait from the stove top to the oven.

Mix up your favorite biscuit recipie and roll out. Cut 1/3 of it into squares for dumplings and the rest into thin strips for the crust.

Bring to a boil:
2 large sweet potatoes (pre-cooked and diced)
1 cup water
2/3 cup molassas
4 Tbl butter
1/2 tsp ginger
Pinch of salt

When boiling rapidly, add dumplings and stir gently. Trun off heat and cover tops with crust. Bake at 400 until biscuit crust is browned.
