Hi ladies. I bought a boatload of cheese on sale because it was so cheap I couldn't pass it up. And of course I had to figure out what to do with it. Shredded some and froze that but we like cheese that you just slice and put on crackers and it just doesn't do well when frozen. So I waxed it and it worked! I LOVE this idea Mary Beth! My mom got us a HUGE (okay 2 pounds ) block of Monterey Jack and I was wondering the best way to freeze it :) Thanks for sharing!

Awesome, Mary Beth! I have always wanted to try this! How long will the cheese actually last when preserved this way?
Thank you both for the links! I have purchased supplies from New England Cheesemaking Supply Company before, and receive their monthly newsletter! What fun it would be to take a class with them - OR, Mary Beth, with YOU!!!!! ;) They are also an EXCELLENT resource for real New England Maple Syrup! I love it so much, I bought an entire gallon! LOL!

Great Idea!! I am looking for ways to preserve foods that do not require electricity to keep them preserved. I started freezing veggies over the summer and now my freezer is too full for necessities such as ice cream! Thanks again.

Jenne - I know what you mean... Now that I think of it, I wonder if that's why I've always lost weight in the fall... I don't have room for goodies in the freezer... Hmmmm.... ;)

Nini, I know that it is supposed to last for a year. Not sure I'll find out, though. My hubby is scarfing my waxed cheeses - he loves cheese and crackers - and just the other day, my daughter brought my granddaughter over and THEY wanted cheese and crackers. So, if it lasts 6 months, I may be lucky!! :-)

That's the problem around here too. Get it all done and they want to eat it all right then and there! LOL. At least they WANT to eat what I put up. I guess that is a good thing.

Laurie, what I found was waxing hard cheeses. I don't think mozzarella qualifies. But you have me curious so I guess I'll have to look that up! :-)

Oh Mary Beth, I love cheese. Hoop cheese is my favorite. I like cheese so much growing up in a large family I rarely ever got any cheese. So for Christmas one year I ask for a block of cheese from Santa. I was so excited to wake up Christmas morning and find my cheese under the Christmas tree. I did not share it with any of my brothers and sisters. LOL. It seem like it took me all year to eat that cheese. What a great ideal on the waxing job you did on the cheese.

I waxed my first cheese! It was fun and now, fingers crossed, it will be just fine for a while. THe store had a huge sale on 2 pound blocks.

Good for you, Laurie!! It is kind of fun, isn't it. I like the preciseness of it - watching the wax cover one half and then the other and then again and again until it is a pretty, thick red!! :-)
