I have an awesome red pepper jam recipe. You grind up the peppers in a food processor so it makes a slightly chunky jam. It's out of this world. Let me know if that interests you.

You got me curious, so I went crawling around the web. Here's what I've found:
http://www.cooks.com/recipe/9v8kt3iv/sweet-red-pepper-relish.html

Cooks.com has a few other recipes, too. Be sure to check them all out!

Here's the recipe for the red pepper jelly (jam)
2 red bell peppers, cut into 1-inch pieces
½ sweet onion, cut into 1-inch pieces
6 medium jalapeno chilies, seeded and minced
1 (1.75 oz.) pkg powdered pectin
1 cup apple cider vinegar
5 cups sugar

Process bell peppers and onion in a food processor 1 minute or until puréed. I put the jalapeno peppers in too.
Combine the red pepper puree, jalapeno chilies, pectin and vinegar in a large Dutch oven; bring to a rolling boil. Quickly stir in sugar and boil for 4 minutes, stirring constantly. Remove from heat. Quickly pour jelly into hot , sterilized jars, filling ¼ " from top; wipe jar rims. Cover at once with metal lids, screw on bands.
Process in boiling water bath 10 minutes.

Makes 6 half-pints. If you don't feel like canning, you can refrigerate too. I give these as gifts so I do canned my batch. You can tone down the jalapenos by eliminating the white pith and the seeds. Or not use as many. If you can find red jalapenos, they are sweet and milder in heat. Using the green ones, you're making a very Christmas looking jelly.

Sylvia that looks AMAZING!

Also found on the cooks.com site: combine 2 T of red pepper relish with a block of cream cheese to make a spread. Looked pretty tasty to me!

ALL the recipes look great Ann....Thanks for looking up sites!

Sylvia, we have a family member that's going to be doing a happy dance!!!!! I'm sure that's the relish that we tasted last year at a craft show & bought some bottles but didn't last long enough! It didn't have the jalapenos but I think that would make it taste even better!
Christmas is all but wrapped up for him!

Ann, the cream cheese & relish was sooo yummy on crackers then topped with crumbled ham or bacon. That sweet/salty hit the spot!

Roasted red pepper soup is too good for words too!

Thanks to both of you! Heading to the kitchen right now!
Judy
