Have any of you frozen ginger root? Every once in a while I need ginger root. Too far from WalMart and sometimes my local IGA doesn't have good ones.

Hey Patsy,

I have and it works for me :) I just freeze it whole and when I need some I cut off what I need and peel and slice or grate.

I am lucky enough to have a Vitamix, & one of their recipes calls for adding the whole ginger root, peel and all into the Vitamix, basically pulverizing the whole thing.. You then shape into tablespoon sized servings, and freeze on a baking sheet. After frozen, pop the discs into a ziplock and keep frozen. I love having tablespoon sized servings of fresh ginger. If you don't have a Vitamix, any high powered blender or food processor may work.
