Any kind, navy, pinto, lima, etc. I just developed type II diabetes and my doc said I need to eat the beans for protein.

I cook up lots of pinto, kidney, and black beans in my crockpot, and then I freeze them for future recipes. I think those, along with chickpeas are used more often here, but I use so many different recipes.

I cook up black beans with onions in the crock pot, then mash them. On a low-sodium soft tortilla we spread the beans, then top it with chopped, cooked organic chicken, then top that with a mix of avocado and salsa (usually homemade salsa). We also make bean burritos by heating the pinto beans the same way, then topping with whatever we like (lettuce, tomato, onion etc).

I make black bean burgers too. Hmm? I'm trying to think what else. I make hummus with chickpeas or red lentils - yum!

I guess it depends on what your tastes are. I have so many recipes that we use. Another favorite is 4 beans and sausage in the crock pot. I'll have to look up the recipe for you if you interested. The kids love that one.

Four Beans and Sausage

15 oz. can Great Northern beans, rinsed and drained
15 1/2 oz. can black beans rinsed and drained
16 oz. can red kidney beans, drained
15 oz. can butter beans, drained
1 1/2 cups ketchup
1/2 cup chopped onions
1 green pepper, chopped
1 lb. smoked sausage, cooked and cut into 1/2 inch slices
1/4 cup brown sugar
2 garlic cloves, minced
1 tsp. Worcestershire sauce
1/2 tsp. dry mustard
1/2 tsp. Tabasco sauce

Combine all ingredients in slow cooker. Cover. Cook on low 9-10 hours or high for 4-5 hours.

Note: We typically use dry (precooking them prior) beans, and less time cooking in the crock pot. WE also use organic or homemade ingredients.
