I want to make huge batches of cool dinner foods for the heat of summer, and I would like to know what freezes well?
I've frozen rice salads and before hand froze them when the were just cooked and still moist and then long let them slow thaw they've come out ok, not best but edible.
So, I'm mostly looking into which summer foods can be frozen? Any tips would be most welcome!

no, potato does not freeze well, they and pasta will turn to mush when thawed, sorry...

actually a lot of people love pasta after it's been froze...I have never had it turn to mush. BUT, mayo doesn't freeze well at all....actually sam's used to sell a frozen pasta salad (had the veggies, beans, pasta, etc) but you added your dressing to it after it defrosted.

yes, I learned the hard way,lol...did what you want to do, froze it all, then thawed for a big barbeque, then had to make fresh really fast

I know this isn't the freeze ahead option you were thinking of but in the summer I've had luck with cooking a really big batch of potato salad, pasta salad with a vinaigrette dressing or tabouli on one day and having it last for the better part of a week in the fridge so we could eat it all week. If you aren't able to freeze it, maybe that would be a plan b option.
