For small batch making (so I can have different flavors and not end up with a ton of one flavor). I'm using these molds:

No certain about candy making but isn't lollipop making like making rock candy?

Here is the recipe I have used for many years.
2C Sugar
1/2 cup light corn syrup
1/2 cup hot water
Food Coloring 2 to 3 drops
Flavoring 2 to 3 drops, I sometimes put in about 5 drops if I want the flavor stronger.

In the saucepan add the sugar, corn syrup and hot water. Bring to a boil, stirring only in the beginning until the sugar dissolves and mixture begins to boil on medium heat. Then put in candy thermometer and when it reaches 300 to 305, remove from heat add coloring and flavor. Pour into molds and you have your lollipops.

I just made honey lollipops! The only ingredient is honey. You boil it for about 10 minutes (don't let it scorch like I did on my 1st batch, let it cool for a minute or so then spoon it into your molds. You can do the same thing with maple syrup!

I am not sure honey lollipops can be given to kids. Can they?

My little boy likes the honey..I've never heard that they couldn't..but I'm also making flavored lollipop with a recipe like Becky's. I get my flavorings from lorannoils.com.
