I just picked up my last CSA order for the season and I now have half a grocery bag full of winter squash.

My husband hates it the way I cook it, which is cut it in half, scoop out the seeds, put it in a baking dish with water, put butter and honey in the hollow, and bake until tender. I served it with meatloaf and he ate two bites.

I saw the recipe someone posted for shepherd's pie, Maybe I'll try that to hide some of it.

Any more creative ideas for serving it without getting caught?

My DH is exactly the same way - hates it!!!!

Try carrot cake or pumpkin bread, in muffins or pancakes (actually it makes a great waffle served with butter nut syrup!)

I peel them and then cube the flesh and freeze it to use in stews and soups. You can even stash some in a veggie lasagna this way... just slice into thin slices instead of cubes...

You can use squash anyway that you can use pumpkin... the only ones I wouldn't do that with are the ones that have a bitter flesh... I had one the other night like that but I don't know which one that it was - i'd bought a variety of them and hadn't seen most of the ones I got to try.

If you have a specific idea in mind, let me know. I have a cookbook that is ENTIRELY about how to use pumpkin.

For example, they make a filling for handmade ravioli, use it to make a cookie dough, make pies with it, etc.

I have tried all of the soup recipes but have never found a pumpkin or squash soup that I like and I love pumpkin and squash... *sigh* Most of them are bland and icky. Thinking about trying a spicy soup - maybe one with grilled peppers in it... have to play around with that recipe some first tho.

Have you tried mashing it with butter and brown sugar? My family loves it that way. Just scoop the cooked flesh out (the way you cook it in the oven) and mash it. We had it tonight for dinner.

you know the pumpkin bread sounds pretty good I almost bought some pumpkin cookies at the grocery store tonight.

Veggie lasagna is also a feasible idea - I used to make with spinach, carrots and tofu (instead of ricotta) - I wonder how Swiss Chard, squash and tofu would taste? Unless of course my Swiss Chard is freezing right now as we speak...wonder if I can go out to the garden and get the frozen Swiss Chard leaves and wash them off and transfer directly to the freezer?

Can I peel and shred the squash in the food processor and put it in a freezer container to deal with another day? Do I have to blanch it first or can I just freeze it as is?

I "second the emotion" on the soups - doesn't even appeal to me, I don't think DH will like it either.

Mashing it with butter and brown sugar is too much like the way I already served it in the half shell - too recognizable as squash...

Can you make pumpkin pie with squash? He loves pumpkin pie, but I usually make it with Libby's canned pumpkin.

This is similar to some of the other suggestions, but my boyfriend loves it mashed with butter and maple syrup.

My mom's sisters family wouldn't touch squash if they were starving. So at Thanksgiving my mom would make pies with squash and call them pumpkin pies and no one ever knew the difference.

At my house a good winter squash is a treat. I either cube it up and add it to my veggies in a roast (lots of garlic, sage, rosemary, and onions), bake it in the same way Brenda mentioned only season with butter and garlic salt or Herbamare, or bake into a pumpkin pie type pudding sweetened with honey and Stevia. It can also be chopped up and tossed into a stew just like any other vegetable. Good luck.

Definitely can be made into pies. Use pureed or mashed version.

I think I blanched mine before freezing but I had big chunks of it for stews. Not sure how it would work shredded.

I did freeze pureed or mashed versions of it but that was after cooking it.
