I have a ton of overripe bananas in my freezer. A TON. I really need to use some to clear out some space in the freezer, so today I am planning on making my favorite banana bread recipe. The problem? It will probably only use about two bananas. I can double it and make extra bread, but I'll still have an overabundance of bananas.

So, what are your favorite recipes for overripe bananas? Can't be anything in which bananas are sliced because once they thaw out, these nanners will be nothing but mush. I'd love some recipes for things other than banana bread!

Hey Leah :)

Here are a couple of recipes that we like :)

Banana-Nut Coffee Cake

Cake:
1 cup sugar
2 sticks butter, melted
1/4 cup milk
2 eggs
1 teaspoon vanilla
3 bananas, mashed
2 cups flour
1 teaspoon baking soda

Topping:
1 stick butter, melted
1 cup brown sugar
1 cup pecans, chopped

Preheat oven to 350 degrees. Oil and flour a 9x13 pan. Mix cake ingredients. Pour into prepared pan. Mix topping ingredients. Pour over cake batter. Bake 30-40 minutes. Makes 12 servings.

Banana Spice Cookies w/Butter Icing

1/2 cup shortening
1 cup packed brown sugar
2 eggs
1 cup mashed banana (about 2)
2 cups flour
1/4 teaspoon baking soda
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon cloves

Mix shortening, sugar, eggs and banana. Stir in remaining ingredients. Cover; chill about 1 hour. Heat oven to 375 degrees. Drop dough by rounded teaspoonfuls about 2 inches apart onto lightly greased baking sheet. Bake 8-10 minutes. Cool and then frost with butter icing.

Butter icing

1/2 cup soft butter
3 cups powdered sugar
2 Tablespoons milk
1 1/2 teaspoon Almond Extract

Brown butter in saucepan over medium heat until delicate brown. Stir in sugar, milk and extract. Beat until smooth and of spreading consistency. Spread on cooled cookies.

Do you have a spare bedroom in CO that I can come & escape reality for a day, or 2, or a week, or a month???

One of my husbands favorite meals is what I call Island Chicken. I just cook the chicken and put some kind of fruit over it. I always have banana mash with it. I take a lot of ripe
bananas from the freezer, add some vanilla and add coconut milk to the frying pan and just cook them down. Sometimes I add crushed nuts. Sounds weird, I know but he loves it and I do use up a lot of bananas. Joey

Thanks for your input, ladies! I totally forgot about banana cookies 'til you posted your recipe, Sharon! I think I made them once before and they were amazing. I'll be trying your recipe for sure.

Here's my favorite:
Banana Maple Walnut Muffins

2 cups whole wheat pastry flour
1 1/2 t baking powder
1/4 t baking soda
1/4 t salt
1/4 t ginger
1/4 t ground cinnamon
2 large eggs
1/2 cup pure maple syrup
1/2 cup firmly packed light brown sugar
1/3 cup milk
1/4 cup canola oil
1/4 t vanilla extract
1 1/2 cups about four bananas mashed
3/4 cup chopped walnuts

mix dry ingredients. mix wet ingredients. combine. add nuts. don't over stir. 375 degrees for 20 minutes. Enjoy!!

I just tried banana "icecream". For 2 servings I add 3 bananas to my food processor and some milk until it is the consistency of icecream. Then I add 2 Tablespoons of cocoa powder. It's a great healthy desert.
