I was wondering if anyone has problems peeling their hard boiled eggs when they are fresh from their hens. I have had no problem peeling eggs from the store, but the fresh ones take forever. And not only do they take a long time, they look mutilated! I talked with another friend who always buys fresh eggs and she has the same problem. I was hoping there was a "trick" that I don't know about. They are so bad that when I try to make deviled eggs, I end up making deviled egg salad! Thanks in advance for any tips.

I put a dozen eggs in the back of the fridge for a couple of weeks. Older eggs are much easier to peel. After cooking, drain the hot water and immediately fill the pan with cold water. Dump again and refill with cold water. Let the eggs cool down enough to handle them. Peeling will be much easier!

Thank you Sunshine and Robin for such a quick reply. I am just sorry I started a new topic (which I think is a no-no) when I could of found it in the old topics. I actually did do a search like I was supposed to first, but all I put in it was "peeling eggs" and nothing came up. I guess I should have put in "hard boiled as well". Thank you again, I am so excited to have this information that I can pass on to the people that buy the eggs from my 11 year old son. I have had one of those "not so productive days" and this makes me feel so much better! I guess that means you are a "true farmgirl" when you get excited about peeling fresh eggs!

Holly, we were having an awful time as well with our fresh hard boiled eggs and it was freaking me out a little bit to think about how old the ones were in the grocery store to peel so nice and easy. We've discovered that STEAMING them is the best way to go. We have a pan with a steam basket in it. You just bring a little water to a boil in the bottom of the pan and set the eggs in the steam basket for about 20 minutes and they come out perfect and sooooooo easy to peel everytime! Good luck!

Good idea, Tiffany. I add a Tbl of vinegar to my boil pot, it makes it easier but I still have ugly eggs by the time I've finished.

Tiffany & Trina, thanks so much for your great ideas. I am going to try each one of them and see which one works best for me. I have plenty of eggs right now to "practice" with and my family would love an abundance of deviled eggs! Thanks girls!

Hi Holly,
I don't know if anyone else has had this experience, but whenever I try to crack hard boiled eggs, I always crack them from the bottom. An air-pocket always seems to form at the bottom, and I find that the easiest place to peel the shell from. Hope that helps anyone!

Holly, I had the same problem - what I did was I put them in the fridge and when they were nice and cold - I craked the egg on the wider side and then rolled the egg with the palm of my hand ( say on the counter) ran the egg under cold water and the egg shell practically comes off in one piece. Gee's i hope i wxplained that where you can understand it :)
