I haven't tried making divinity in years. I remember one time I actually burned up the motor on a mixer while in the process. Does anyone have any special divinity recipes, or tips and tricks for making it successful?

I think Divinity is basically marshmallows. MaryJane has a recipe on her log for marshmallows.

Divinity is totally different than marshmallows. It is just as tasty but the texture is different

I don't have a favorite recipe but make sure that when candy making you adjust for altitude. For every 1000 ft above sea level subtract 2 degrees from cooking temperature. Barometric pressure sometimes affects candy making. I have only made Divinity once a few years ago but I remember having to work very fast before it 'set'. Make sure you have everything ready :)

Not only does altitude and barometric pressure affect divinity, but humidity as well. It makes it sticky.

Has anyone tried making butterscotch?

When making divinity, make sure it isn't raining. I'm not sure why, but it never sets right if it's raining. I will try to find my recipe.

My grandma used to make wonderful divinity, and I remember her saying as well, it never turned out right on a humid day, which is all summer here. I will look for her recipe

I tried making it years ago when I lived in Seattle and it ended up a horrible sticky goo-y mess, but have had more luck with several recipes here in Idaho =) Follow the recipe and instructions to the letter and it should work well so long as its a dry day. My mama loved divinity!

I think it's the egg whites that are affected by humidity. I can't make decent meringue when it rains. I think you could cut back on the water in the recipe a little if it's humid where you are. Or just make fudge :)
