I'm pretty sure you can, Kristi... It's just a finer granulated sugar. I have a couple of recipes that call for it, and have substituted regular granulated sugar for the castor sugar with no problem (although I've never used for fruit leather... that may change the texture?). I think the castor sugar is just finer, lighter in weight and dissolves easier, that's all. I think they use it a lot more in Europe.
I also know that you can make your regular granulated sugar finer like castor sugar by processing it in the food processor, but I've never bothered. If you are going to try that, I think you need to use a greater amount of regular sugar than called for in the recipe. Maybe one of the other girls knows the ratio, but I'm sure you'd be able to look it up online, too.

I don't use any sugar when I make fruit leather. Only fruit, nothing else.
