I'm planning on doing some plain, but would like ideas for other ways to can ground beef. Can I do sloppy joes and taco meat?

Also, I know about canning bacon...

Can you can breakfast sausage? Do you can it raw or cooked?

How long are these items good for on a shelf?

Ann, I can breakfast sausage a lot. I make patties and then fry, stack into jars and evenly divide the grease between the jars (it won't cover the meat) and then process in a pressure canner. I have bottled seasoned ground beef, sloppy joe mix, BBQ beef, spaghetti sauce with meat, meatballs, plain, salted, taco meat, etc. As long as it is sealed properly, it will last for YEARS!

You can bottle all different meats raw or pre-cooked. Sometimes the texture ends up a little different, but it works none-the-less.
