Been a busy few days. 26 Qts of apples juice, 12 pints of spicy salsa, 6 pints of saurekraut, hung half dozen strings of various peppers, froze two boxes of corn, 8 trays of cherry tomatoes and 8 trays of apples on the dehydrator (not at the same time), and 4 different tabasco sauces started.

I picked peaches this morning and made a peach crisp for my son. Will make me one tomorrow. Canned 15 pint of tomatoes yesterday. I may freeze some of the peaches I picked, but I only picked about 15 pounds.

I canned 28 qts of green beans on Sept 1 & 2. Still have a ton to pick out in the garden, special thanks to hurricane Issac for blessing our garden w/3" of rain! More to follow......

The 2 bushels of peaches look wonderful in the jars on the shelf, got them done last night. I made a batch of peach jam, too. Today I made a batch of chokecherry and wild plum jelly, and am making chokecheery syrup. DH picked some more Stanly cross plums, and I made a brandy jar. This is first time I have done that. Hope it turns out.

Wow, everyone is so busy! Kennie Lyn, I love Wild Plum Jelly, yum!

We were blessed with some zucchini so I am making Zucchini Salsa today along with some Raspberry-Jalapeno Jam.

The other day I put up:

~2 dozen quarts of Sour Cherry Juice
~1 dozen half-pints of Pear Honey
~1 dozen jars of Sour Cherry Jam
~Froze a case of Olathe Corn
~Froze some shredded Zucchini


Still left to go... Loganberry Syrup, Violet Syrup and Salted Butterscotch Peach Jam (or sauce is more like it when I make it :)

I want to try Apple Pie Jam when the apples are ready.

Sharon, what do you do with the sour cherry juice? I have several jars of wild plum juice I made last summer. I tried putting it in lemonade, or mixing with grape juice, but DH doesn't like it, even after I put lots of sugar in it. I used it in the chokecherry jelly this morning, and it tastes good. I love wild plum jelly, it is my favorite, and all the different kind of wild plums taste just a little different.

Love the idea of chokecherry jam. They (the berries) are so hard to find around here. I can remember when my grandma used to make jelly with them and also wine. Delicious.

I just finished canning turkey and then green beans. I have a turkey pot pie in the oven right now, made with the last jar of canned turkey from last year!!

I'm canning more seasoned tomato sauce right now. I picked more tomatoes, in all about 40-50 pounds. I will have to either freeze the rest or make more taco sauce. I picked a pot full of peppers too. The season continues for us.

Last night I canned my second batch of tomato sauce. The first batch I left plain this batch I put Italian herbs in to season. We just had our first frost last night so the end of canning season is pretty much here. I do hope to can some apple pie filling soon though. We sure ate quite a bit of it last year. I love that if I want to make an apple pie all I have to do is make a crust rather than cut up all the apples and make the filling. I also love that a impromptu dinner desert can be an apple crisp in no time at all. This year we also will have cherry pie filling that I canned earlier.

Today I canned whole tomatoes. I have never canned tomatoes like these. I thought maybe it was just the ones from my garden, but I have canned them from 4 different gardens and all are the same. They have big hard cores, sometimes taking up 1/3 of the tomato. I cut out the worst of them, and canned them anyway. I don't know how good they will be. But any home canned tomato is good in the winter.

Two days ago I canned 10 quarts of pickled beets, the day before that I made a batch of beet chutney, and froze four ziplocs of them as well. I also have wine started from the apples I picked. Before that I canned dilled beans.

More applesauce! I made another gallon last night, and will strain, heat, and can it tonight after we get home from DS playing basketball... so after 8 pm. We were given 65 pounds of apples by a friend plus I have gleaned some from my office. Got those all done and my friend brought me another 30 pounds! We'll probably dry some as well. What a treat, 100 -plus pounds of apples!

Lucky, you, Jamie! I bet your whole house smells wonderful!!! Yum! Applesauce!!

I love your pictures, Nicole! We were supposed to go apple pickin' this past weekend, too, but things got all jumbled with my husband's schedule, so we didn't make it. :( Hopefully this weekend or next, though... You're pictures, however, tell the story that I am looking forward to! I can just smell the apples and fresh air, and feel the sunshine! Thank you for sharing!

Last week, canned eight pints of pickled hot peppers... This week, if all goes wel, I'm planning to can chicken, ground beef and some chili and stew! And, of course, applesauce, if we make it out to Simmon's Farm! :)

Today I am making lard. I have been out for a while, but didn't want to heat up the kitchen rendering pork fat. It is cooler today, DH and the cowboy bunch are wanting apples pies.

Thanks, Nini! We went again Saturday and it was so much fun. DD got a white pumpkin, too. I just love them for fall decorating, and if it lasts, I'll use it for decoration through the holidays. Hope you get to go apple picking.

Canned 6 1/2 pints of spicy tomato jam and 3 pints of salsa this weekend. I wish I had more tomatoes. Anyone have any ideas for something to make to can with blackberries besides jam and syrup?

Harvested 1/2 our little corn field, got about 4 bushels. At 1:30 AM canned a total of 50 pints of corn. have apples for apple butter. I told Dave, please do not pick any more corn for a couple days...PLEASE...lol
