We picked peaches this week, so I am making peach jam over the weekend. Anybody else canning this week? What's cooking at your house?

Here in East Texas it is hot enough that most things have stopped producing. I did freeze some okra and put roasted poblano peppers in oil yesterday. Beth |

Nicole, I'm thinking like you ... I canned peaches (Sun High's .. my Mom's favorite) this past Wednesday and making Peach Jam over the weekend. For the canned peaches, I used a recipe with a honey syrup instead of the white sugar syrup I usually use. The syrup tasted fantastic! Now to pray that my Peach Jam thickens, I always have such a problem with that.

Yum! Deb! Your peaches look Heavenly!!! Will you please share the honey syrup recipe? That sounds fabulous!
My foster daughter and I canned a TON of grape juice on Monday. I think she needs a break, though. It was her first canning experience, and she's hooked, but I don't think she has quite recovered from crushing grapes yet! LOL!! :)
Right now, I'm on the verge of getting overwhelmed with tomatoes, so I'm sure that's on the agenda over the next few days. In the meantime, I am looking for a really good recipe for peach salsa. We simply love it and I'd like to make it instead of buying it by the caseload as I usually do (I know... For shame, Nini! For shame! But I'm just learning!!!). Peaches are in season and on sale everywhere, so I'm hoping we can either pick some up or literally go peach-picking this weekend, and then the canning will begin!!! I want to do the salsa, jam and can a few jars of peaches, too! We'll see how far I get working alone... Maybe I can coax my foster daughter to come back to join the fun since there's no crushing going on! LOL!
If anyone has a great peach salsa recipe to share, I'd really appreciate it!

Thanks Nini! Here is the recipe for the honey syrup.
Combine: 3 1/2 cups honey, 1/2 cups organic sugar, 7 cups water. Cook on medium heat until sugar is dissolved. Put a layer of peeled, pitted, and quartered or halved, whichever you prefer, into the syrup. Cook for 3 minutes. Fill jars, put on lids and process in a hot-water bath for 30 minutes.

I put up a huge batch of tuna the other day... today it's lard and maybe some beans. Also putting random veggies in the dehydrator. I do need to get some peaches put up as well... but not sure that's going to happen until next week.

I had some hot peppers left from market so I canned them yesterday. And frowze some beautiful bell peppers. Tommorow I'll be canning Blue Lake green beans. I have almost a bushel and I just don't feel like going to market with just beans.

Watermelon Rind Pickles and Watermelon-Muscavado Jam. Hubby loves the jam. I love the pickles! Am awaiting new gasket for the pressure cooker and then...Katy bar the door! ;)

My DD just asked the other day "when are we going to do more canning?". Last year at this time I was a cannin fool. So far this year I havent done much. I did freeze 3 quarts of green bell peppers the other day and also picked a ton of basil which I put in the blender with a bit of olive oil, made it into a puree, and then poured it into ice cube trays and froze them. They are so easy and convenient for cooking- just plop a cube into your soup etc! Better get going on canning- thats for sure. All of your canning recipes sound delicious! Thanks for sharing! Smiles,

I am going to do freezer pickles and slaw, the can some zucchini relish for my daughter and myself, I have a week off work, I like to find some tomatoes for juice. Everything looks so good that everyone has canned! Roxanna |

Today I am canning Cowboy Candy(candied jalapenos)...we can't get enough of these & neither can our friends. I am doing a lot more this year for Christmas! Windows open & eyes are watering but it is worth it...just step outside once in a while for some fresh air! Yum!

Kristin, your peppers look beautiful in jars! They almost look to pretty to open and eat!
Deb and Sheila, the peaches and pickles look wonderful!
CJ, the plum jam sounds wonderful. Your husband sounds like a wonderful guy with all of the things he does. You two make quite the pair! :)
Beth, candied jalapeños sound very interesting. Are they pretty hot, or does something in the recipe tone down the heat?

pickles and salsa over at the Schipp house...but I'm really wanting to get information on canning meats to prepare for a potentially bad winter and not being able to get to the grocery...we had such a mild winter last year that I'm expecting a rebound effect......I'm needing info on canning chicken, sausage, bacon, hamburger if anyone has info to share

Emily, the candied jalapeno's are hot, but I mix a pepper with them called fooled you...they look & taste like a jalapeno but without the heat, so it does make them a lot more mild. I mix them about half & half so they aren't too bad. Beth |

I didn't plan on canning any beans but these didn't sell at market. So had to do it. I got 14 quarts. And had some to cook too. That was from a little over half a bushel.
