From "Quarter Acre Farm", I canned 6 jars of lemon slices. The recipe calls for layers of lemon slices & salt, processed for 10 minutes. After this has marinated for a week or 2, the rind is what is utlized. It can be used for a piccata, salad, soup, pasta, anything that calls for a lemony flavor. I can't wait to see how this tastes. & yes, those are the Tattler lids. My 3rd year using them & the rubber rings still seal like a charm. Anyway, I am excited abut the lemons, apparently the canning process REALLY brings out the lemon flavor. |

I've heard of preserved lemons before, but thought they were done whole. Please give more detail on how you did this. It sounds wonderful. |

Lisa - now THAT is cool! I love lemons! My mother even used to suck lemons during her pregnancy with me because she so desperately craved them! I have GOT to try this! What a neat gift this would be for her for Christmas, don't you think???? And I'm SO glad you mentioned the Tattler lids... I've been debating whether or not to try them. I was very excited to see them in MJF magazine, and knowing they've got you're approval, I've got the incentive I need! THANK YOU! I'm going to order some as soon as possible! You ROCK, sister!!! I went to a website called The Quarter Acre Farm, but could not find a recipe for preserved (canned) lemons, other than one that included lemons in with olives. Can you give us the recipe? I would love to try these. |

Keep us posted. I have a huge lemon tree that produces so many lemons, maybe I could do something with them now. I usually give most of the lemons away to neighbors and friends. Marly

Lorie Thanks for posting the recipe. The one I used is basically the same, although I canned mine in slices, and processed in a water bath canner for 10 minutes. Would you mind posting your recipe for Limoncello?? Thanks!!! |

Hi Lisa! I'm on travel now in New Orleans but will certainly post and send my Lemonxello recipe to anyone who wants it. It's a family recipe and really tastes good! I'll post this weekend when I get back to Tampa.

Hi Everyone! I'm sorry it's taken me so long to post my Limoncello recipe but I've had a really sick hen to tend to this past week. Here ya go and enjoy!
2 1/2 pounds Meyer lemons 10 lemon leaves 1 liter distilled spirits (90%% to 95%% pure spirits) 1 1/2 pounds sugar 34 ounces water
Wash the lemons and leaves; with a potato peeler remove the rind from the lemon (take care to only remove yellow skin and non of the white pith)
Place lemon rind, leaves and alcohol in a sealed jar and let it soak for two or three weeks.
Toward the end of the two/three weeks put sugar and water in a pan, let it boil for 4 minutes and let it cool.
Mix everything, remove the lemon rind and filter the mixture through a coffee paper filter or washed cheesecloth.
Pour into bottles and place in freezer. In few hours the Limoncello is ready to be served.

Hi Lisa! I use an extra smooth Vodka. It costs a little more but tastes fantastic! Thanks for asking about Miss Hattie, she's feeling much better.

Attempting to make a Gluten Free Lemon Olive Oil Cake today. My recipe is for regular flour but since I'm Gluten Free these days I thought I'd try and tweek this recipe so by the time the holidays come, I'll have a few extra things so I won't feel left out. I'll keep you all posted.

Lisa, I'm also gonna try to make some Limoncello this weekend without the traditional sugar. Along with being Gluten Free, I'm sugar free so I'm gonna explore some alternatives. I'll keep you posted.
