Hello, ladies. It's time to pick and use the wild elderberries. I always make at least one batch of jelly. The first time I made it 14 years ago, I was hugely preganant with my daughter and enjoyed the blissfulness of ripe fruit and kitchen work (unaware of sleepless nights to come!) It's been a tradition ever since. My daughter LOVEs it and so does my son. W always wait to cut up apples to place i nwit hthe berries (more juice and a sweeter, milder flavor).

So, it's rained now for three days, but I hope to see some more left to pick tomorrow, probably the last of the season.

Does anyone know how to make wine or syrup from the juice? Any other uses?

I just love elderberries! I wish I had some recipes to share with you - I've never made anything with them, but my neighbor does and her jellies are wonderful, as are her wines. When I see her next, I'll ask for some how-to information!

Our elderberries ripened last month here. I tried making some elderberry jelly but it didn't set up. I'll bet if I re-make it, adding apples, it might make some useful jelly. Is it OK to remake a month later, or does it have to be done right away?
