I've made an offer on a house (my first, yeah!) but I'm not crazy about the stove, which does not look like it's in the best shape to me. The house inspection will provide more info but if everything works out, I'm thinking about replacing the stove--at least eventually.

The stove has a ceramic stove top, which I've never had. From my reading, it sounds like I can't use my big canner on the stove but will I be able to can using my other stock pots with a smooth bottom? I also got the impression that you have to be very careful with cast iron (which I love to cook with!)

Does anyone have experience canning with a ceramic stove top? Any advice?

Thanks!
Deborah

I actually got rid of my ceramic top a couple of years after we built our new house & I picked out all of the appliances. I didn't realize that either. I tried cast iron, but did have to be careful. I ended up buying a coil type & replacing it. They are fairly cheap to buy. Now I can use my canner & cast iron & not have to worry. I didn't really like my ceramic top anyway, always worried about scratches & kind of a pain to clean, in my opinion.

Deborah, I teach canning classes here and unfortunately, you can't use a ceramic top stove to pressure can. There are waterbath canners that are made for ceramic tops that enable you to can acidic foods because all they are doing is boiling. But ceramic tops have sensors that will cut down the heat if the elements underneath are getting too hot and so, in pressure canning, a steady temperature is not created. Also, the heavy, very hot pressure canner can crack the top. Hope that helps.
