I am really into fermenting and sprouting lately. I just sprouted lots of wheat berries, dehydrated them and ground them up. Now I am soaking the four overnight to make "no knead" bread.
Kitchen looks like a food lab with a "ginger bug" fermenting (natural sodas http://www.herbmentor.com/20080924_6/) next to the water kefir and another batch of wheat berries sprouting.
Anyone else into this odd behavior?

Yes. I have 1 1/2 gallons of kambucha always on the counter. When my goats are in milk I have kefir going. And I do alot of fermented cabbage and cucmbers when they are in season. I love fermented veggies. ANd love my kambucha. I am trying to stay away from wheat or I would do that too.

I want to learn how to ferment and make kefir and kambucha. My husband is gluten free because of celiac disease so am I just because of what I've been reading about glutens. Any way you ladies can point me to a resource to get started?

Kristin, kambucha is something that intimidates me. I don't know why. I am doing the sprouted flour bread because I have been told that sprouting changes the composition of the grain to a vegetable...at least that is how your body processes it.

We are big sprouters AND fermenters here too! I love and make both water Kefir and milk Kefir...I have not tackled Kombucha yet, but we buy it from a local guy, almost the same thing!
I found a couple of resources for you Mary...the first is for Kombucha. They send you all sorts of free information and instructions for free:

Kathryn, my kambucha just sits there on the counter all by itself. It does all the work. I just add tea and sugar. I leave it at least 2 weeks. I love that stuff. I'll have to research the sprouted wheat now.

With a ginger bug you just use raw ginger, sugar and water. If you click the link from my first post above the instructions are SO easy. Mine was fizzy in two days. I have dairy kefir but have not had time to rehydrate it yet. The water kefir is taking a break until the week after next and then I start it up again.

Kristin I may have to pick your brain about the kambucha soon.

Thank you so much for the links. MeWoulf. I appreciate it. I'm just now learning about this fermented foods, kefir and the importance of it. I am just getting over a 3 month bout of a intestional attack. Doctors still haven't diagnosed me, but I know that its all about eating right and healing myself. I've loved this sisterhood because if the wonderful knowledge that everyone shares. Thank you for sharing what you know.

You are so welcome Mary! I hope the real traditional foods start making you feel better soon. As a person who has suffered from IBS for years, I am struck by the incredible simplicity of the equation to good health...good food = good health! Why did I not realize that sooner!??!?!
