How hot can you heat up your cast iron cookware and not do damage to it...or can it handle anything? I saw a recipe today for making steaks by getting the cast iron pan "screaming hot" and then searing a frozen steak in it. Once seared, it would be placed in the oven to finish cooking. I'm just wondering how hot is "screaming hot" and whether or not I would run the risk of doing damage to my pan.

To hot and they can shatter I do know that, but the one I saw was in a house fire.

Thats so true they will shatter. Also you do not want to cool it with cold water. Let it cool natural.
Screaming hot means hot hot but not smoking. You can thaw your steak and cook it in a hot cast iron. Its just like grilling it.
Cooks fast-seals in juices and is tender. Let us know when its ready we will all bring a covered dish.

Thanks for the info about shattering...wow, I don't think I want to see what kind of damage that will do. I'll be sure and let you all know how the steaks turn out!
