I was making a vegetable stew last night but we ended up eating eggs and toast, as I realized little worms attacked my kale - AFTER I added it to the meal. EEEeeeeewwwwww! At least the toast had homemade peach jam. ;)

Tonight I made a pork chops in the skillet with a light mushroom Tarragon sauce. So delish over rice. On the side, the last of the green beans.

What's on your table?

Thinking about stuffing large portabella mushroom with bread & tomatoes topped with parmesan cheese. Got to find a way to use up stale baguette besides giving it to the chickens.

Oh my goodness, Sara - that sounds heavenly!

Nicole - My foster son worked as a cook for years and will not even touch kale. He said it's always loaded with bugs and darned near impossible to get rid of them. I've thankfully not had a problem with that yet in my garden kale, but I sure have seen critters floating in my broccoli water! Sometimes I've rinsed it 4 or 5 times and still the worms come out. Ewwwww is right! My hubby tells me just to chill - it's only a little protein. NOOOOO thank you, very much!!! LOL!

Today was the first cool/borderline chilly day we've had in ages, so I whipped up a big batch of homemade spaghetti and meatballs - the sauce was made with my first batch of home canned tomato sauce, and I used the tomato powder I had made from the dehydrated skins to thicken it instead of tomato paste. Oh my GOSH so good - tasted like the sauce was made with fresh tomatoes from the garden! My son loved it so much, he asked if he could take the rest with him to school tomorrow for lunch! :) :) :)

Hugs -

Nini

Hi Nini, LOL. I'm with you. I will get my protein some other way. On the other hand, the chickens are loving the kale from the garden - double treat with the worms!

This week I made One Skillet Macaroni and Beef (comfort food). Last night we grilled a steak with sweet potato oven fries (like CJ), and broccoli. Tonight I made chicken simmered in wine with capers and kale (store bought and worm-free, thank you)with a salad of different colored tomatoes, cucumber and basil.

What's on your table?

Yesterday DH was mowing our lawn and found a puffball mushroom about the size of a tether ball. Our daughter and a friend had stopped by at that time. We only saw the one puffball. I knew they were edible; but, usually when we find them they are past prime. Daughter said ewww. Her DH will eat anything. So, I sent half home for him. I cut two slices about the size of bread slices, then cubed them and sauteed them in butter. My DH thought they were very bland. (He usually doesn't like any seasoning on his food: health reasons). I thought it wasn't bad. Tonight I will saute more and add seasonings. Seems to me this was kind of like cooking summer squash in that large amount and needs to be flavored to taste like anything. Any recipes?

WOW! Judith, I would be scared to eat a mushroom that just popped up, but you must know what you are doing. Since it reminds you of cooking squash, how about sauteing in olive oil, with an onion, some garlic, and a pepper, like a stir fry and season it with something like cajun or curry spices? Just an idea.

DD came down with a bad cold last weekend so I made a big pot of my Magic Elixer Chicken Soup (what I call it, made the recipe myself, and works like a charm). It's chicken soup with pasta, carrots, onion, peas, onion, garlic, and heavy seasoning of ginger, turmeric, sea salt, cumin, and pepper.

Saturday was our anniversary, but we had friends over. I made a big pan of lasagna and my friend made a salad, garlic bread and apple pie.

Last night we went out for our anniversary. We ate at a new Texas Barbeque themed restaurant. It is impossible to get in late or on Saturdays. It was Sunday at 4 and the three of us had to share a table with another party! It was so good - smoked brisket, fried green tomatoes, smoked turkey, beans, mac and cheese, Oh MY! I must be gaining five more pounds just thinking about it. I think I need to buy a smoker...

Anyway, tonight I have baked a chicken. We will eat that with baked potatoes (seasoned with yogurt and herbs), and a big, green salad.

I have plans this week to make the onion pie recipe from Sara one night, pumpkin chili (to kick off fall) another, and a big pot of beans this week. The weather is cooling off and I want to be in the kitchen more. :)

What's on your table?

Farmgirl Hugs,
Nicole

I'm running my tail off today, so it'll be a nice green salad of arugula and baby mustard green with our little grape tomatoes and creamy scalloped potatoes and crumbled bacon. Simple, but hey.

I think I'm going with the old stand by tomato basil soup and grilled cheese. I had planned something more exciting, my allergies are really bad today and I just don't think I will taste much of it anyway.

Hi Sharon! How do you make your homemade pizza? I make mine with cheese, herbs and fresh tomatoes. That's our favorite.

This last week we were all three a bit under the weather, yet all had a crazy week. I was feeling the need to make some comfort food. I made a chicken pot pie with leftover chicken, mixed veggies, and potatoes. Seasoned it with tarrgon and topped it with an MJF bakeover crust. DD declared it the best pot pie ever! I also made a big batch of pumpkin chili, and last night was mashed egg sandwiches and sweet potato soup. Tonight I am going to try the onion pie recipe. Making several pie crusts as I am trying the apple pie that MJ posted yesterday. I might make a few more crusts as my dad suggested making extra pot pies and freezing them like my grandfather did. We will see how much I get done today, though. ;)

Nicole

Nicole,
Have you made pizza with cauliflower crust . . . there's a recipe for it in Mary Jane's Milk Cow Kitchen book. We love it!
We do use less cheese than the recipe calls for and put all kinds of things on for topping.

Hey Nicole:)

Edited to add that I just realized you were asking about pizza in general:) Michael is the pizza maker:) We use sauce, some cheese and this summer we have just been adding fresh basil leaves. We also like using fresh tomatoes, bacon, and the last few minutes of baking avocado slices:)

I have tried so many recipes including some for canning but always go back to: Tomato Paste, white wine (or water), herbs, a dash of salt, a little bit of sugar for cutting the acidity. That's about it. I add white wine or water until it is a consistency I like.

Nicole, you are right! The puffball mushroom needed probably all of those additional ingredients you suggested. I would use them next time. DH changes his diet almost weekly (lol). He is a hard one to keep up with. Lately he uses almost no seasoning unless I can sneak it in while cooking. (He is worth it though).

I have a difficult time cooking like that.

Hi girls!

Judith - there is a big article on puffballs and cooking them in Backwoods home this month... Not sure if you saw it or not, but it was pretty interesting! I'd try them!!! :)

Yesterday we had Grandma's pot roast made with all my home canned ingredients - yum yum yum!

Today it's chicken pot pie - it's in the oven right now, and boy oh boy does the whole house smell good! :)

Have a great evening!

Hugs -
