CeeJay, What time is dinner??? I will be there...wish! Sounds so good!

Saturday I made the best dinner. I made a thirteen bean pot (a mix of thirteen different kinds of dried beans) with sweet apple sausage, onion, garlic, kale, and red pepper. I let it simmer all day. Oh. My. Goodness. It was sooooooo good. Last night, DH was determined to grill a steak. He had to dig a path to the grill with all the snow first. Then when he found it, it was frozen to the deck. He still managed it, though, and I made roasted carrots and potatoes with cajun seasoning. Yum. Vanilla ice cream for dessert.

Tonight I've thrown a chicken casserole in the oven. :)

Tonight it's Chinese style chicken and veggies, the way my hubby makes it which is OUTSTANDING!!! He put so much in that there might not be anything along side except for rice.

Well, hubby had a change of plans and we enjoyed his Chicken Fajitas instead. I had mine over spinach . . . he had his in a tortilla!

Hi Jennifer, and welcome! That sounds really good!

Tonight is an easy, quick dinner: Organic veggie burgers. To go with them, I am making some sweet potato oven fries. I bought a big bag of organic sweet potatoes at Trader Joe's. They are very sweet. Had one for lunch yesterday. I baked it and ate it with a dab of coconut oil and salt.

It's Friday. Cleaning house, doing laundry, etc. Want to knit later on. Making a homemade pizza on my pizza stone tonight. How's this sound: homemade wheat crust, homemade sauce, mozzerella, tomatoes, green peppers, a little kale, fresh herbs like rosemary and basil, parmesan cheese and a drizzle of olive oil??

Tonight is lemon linguine, green salad, and a homemade baguette from the freezer with garlic butter. I make a batch of sourdough baguettes every weekend and keep them in the freezer and just pop them in a 300 degree oven for about 12 minutes when we want one with dinner--I love having fresh homemade bread that takes just a minute!

We'll be having thick cut pork chops, pan sauteed with a dijon herb sauce, twice baked potatoes with some leftover baked potatoes from the weekend, and steamed broccoli.

Jennifer, your dinner sounds great! Would love to know how you do your dijon herb sauce.

Yesterday DH made "frikadeller" Danish meatballs again with brown sauce, and potatoes. No cabbage so we had broccoli instead. For dessert, we killed a carton of gelato. (A small carton, but we were piggies, I admit).

Tonight I am still thinking...ideas?

Thankful we missed all that snow they promised. We have no snow, but cold. Comfort food it is! Making old-fashioned, brown sugar sauced meatloaf, mash potatoes, and a vegetable casserole. MMMMMMmmmm!

No problem! I pan fry the chops with some oil/butter after lightly dusting with flour and salt and pepper. Once they're brown, I remove the chops and deglaze the pan with white wine or chicken broth and then whisk in some dijon mustard and herbs. I like the Parisian Herbs from Penzey's, but any herbs you like would be fine. Once the sauce reduces a bit, I add the chops and any drippings back to the pan for a few minutes and then serve.

This is what I had for lunch one day this week. Falafel on a bed of lettuce with cut up red pepper and snap peas topped with a dollop of plain yogurt.

Well tonight at my house it's going to be extra cheesy cheese chili rellenos with home style hand made very special super dooper bright and cheerful salsa and a hazel nut and pear tart for a sweet after! I really want something colorful and bright tonight, it's been a week of make-do food since I've had a monster of a cold.

Mz Annika,

That sounds really good. I am so sorry you have been under the weather with a cold. I do the same thing when I am sick and we eat just what is in the pantry and is super easy. Hope you feel better soon.

Tonight I had a plate made by a lady that helps my sister clean her home. The ladies daughter is getting married soon and they are raising money by fixing boston butt (BBQ) and potatoe salad and baked beans....even had a slice of pound cake in there also. She only charged 7 dollars and it will be used for a good cause. I had to work all day so it was nice to not have to cook when I got home.

I haven't updated the thread lately, sorry girls. I have not been on the forum as much as I usually am.

Anyway, last night I had another family for dinner. I made lasagna, salad with mixed lettuces, kale, seeds, and a homemade creamy yogurt vinaigrette. For dessert, homemade cheesecake and chocolate chip cookies. My friend brought an appetizer platter with prosciutto, ham, danish blue cheese, two other cheeses, and candied pecans, all from Whole Foods. I think I am ten pounds heavier today.

Tonight I am making Chicken Kiev, a recipe my brother raves about. Thinking about roasted potatoes and carrots with it.

I am tooo pooped to cook.... Maybe a salad or a can of soup. Homemade potatoe soup sounds wonderful. What is your recipe? And can I freeze it? I still use my mommas but haven't cooked it in a long time.

Daizy, I will be happy to post the recipe for you. And yes, I think it can be freezable. We ate it again last night and it is even better as leftovers. (I made a big pot for two nights). I will post it in a bit, after I cook tonight.

Tonight is my birthday. Since I was a little kid, I have always said I want to have a dinner with all my favorite dishes all at once. Sooooo....I am making all homemade: my grandma's Greek Macaroni and Cheese recipe, and Caesar Salad with homemade dressing. I was going to make chocolate chip cookies as dessert, but had a birthday cupcake and that was enough sugar for a while! Told my mom what I was making and her reaction was, "No meat?!?" Same reaction my parents had when I was a kid and I would just want veggies and sides. :)
