Making a salad, and taking burger patties to a friends house to throw on the grill. So let's see. Hamburgers, salad, baked beans, and blueberry cobbler. They own a blue berry farm. Yum can't wait......

Blueberry cobbler, oh yum!

Last night we grilled steaks I marinated with apple cider vinegar, organic spicy steak rub, and olive oil. They were so tender and good! Also made peppers, potatoes, and carrots in foil packs on the grill. Hubby made a light bearnaise sauce. For dessert, Godiva chocolates a client of my dh gave him.

Tonight I made a whole wheat pizza crust (from scratch). Topped it with homemade sauce, sliced tomatoes, basil, spinach, chard and arugula baby greens, and green olives. For salad tonight I tossed mixed baby greens, tomato, sprouted seeds, avocado, and peppers with a lemon vinegrette.

Tonight was just spaghetti and meatballs, but that's exactly what sounded good on this stormy, chilly, grey MONDAY. I cooked all weekend, including Friday night (grilled red snapper with homemade Chimichurri sauce with fresh herbs from the garden), roasted baby yukon gold potatoes with onions and garlic in a foil pack on the grill and steamed green beans with fresh lemon butter.

Saturday was the Kentucky Derby so I made Benedictine spread, Pimento cheese and beer cheese to take to a party. Then Sunday was a First Communion and I was asked to bring the Pioneer Woman's spicy pasta salad with basil, smoked gouda and tomatoes, so I'm pooped after working all day and darn if that spaghetti didn't hit the spot!

Sharon, glad to know that it's a reminder--it's such a great day in Kentucky, even if it WAS rainy and cold!

I love taco soup--just so yummy!

I think tonight, if it doesn't rain (I've said that every day this week so far), we're going to grill a pizza on our new grill. Cross fingers that "scattered thunderstorms" stay well to the north!

I love watching the Kentucky Derby, but keep forgetting until the last minute about it. I want to do a Sisterhood Chapter get-together one year where we drink homemade Mint Juleps and wear big hats and watch the derby.

Tuesday night I ground up fresh organic chicken breast, mixed it with onion, orange bell pepper, garlic, salt and green stuffed olives and made chicken burgers. Served it on organic, fluffy buns and garnished it with avocado and tomatoes.

Last night dh made danish food: frikadeller, or danish pork meatballs with potatoes and brown gravy. It's a classic danish meal.

Tonight I need inspiration. Hasn't hit yet...

Alright...curiosity piqued-what is Chicken Bog?
We took advantage of the half decent evening and no rain and grilled bison burgers, grilled asparagus and potatoes. Ate it on the porch and listened to the rain that finally fell :)

My dd has been under the weather. Yesterday was hot and humid and 91! Today is cool again, low 60's. you've inspired me...I'm making homemade chicken noodle soup with bread and salad! Thanks!

Nicole, I hope your daughter will be feeling better soon. One of the reasons I made the soup was because my honey wasn't feeling well.

Saturday was my farmgirl sisterhood brunch, so for dinner we had leftovers from the party. Some great recipes: Ham Asparagus Strata (new recipe I made, yummy!), Jackie's salmon cakes from the latest issue of MJF, Ali's broccoli salad, and cupcakes I made from MJF's special recipe issue.

Yesterday we had a big lunch so we ate sandwiches made with homebaked organic bread. Tonight we will grill a steak, and I'll make roasted potatoes and a big salad.

Sharon, could you post your Rosemary Balamic chicken recipe? That sounds great! Tonight is fajitas by special request, made with multi-colored peppers and yellow squash. Homemade tortillas.

Last night was Brown Sugar Meatloaf, baked sweet potatoes, (they were divine!) and a mixed green salad with lettuce, snow peas, and a new recipe for a creamy vinegarette that was really good, too.

Here's that Salad Dressing recipe I made. Thought you all might like to try it since all the yummy fresh veggies are popping up!

Creamy Vinaigrette

3 TBSP sour cream
3 TBSP Olive Oil
3 TBSP white wine vinegar
1 TBSP sugar
1/2 tsp basil (1 tsp fresh, snipped)
1/2 tsp parsley (1 tsp fresh, snipped)
1/2 tsp oregano (1 tsp fresh, snipped)
1 clove minced garlic

Combine in a jar, cover and shake, shake, shake! Makes 1/2 cup

Side dishes, hmmmmm. How about this:

Strawberry Salad

6 cups mixed greens
2 cups sliced, fresh strawberries
1 medium red onion, chopped or sliced into rings
1 cup fresh mushrooms, sliced

Combine above ingredients. Toss with dressing.

Dressing ingredients:

½ cup olive oil
¼ cup red wine vinegar
1/3 cup sugar
3 Tablespoons poppy seeds

Mix well.

or...

Drop-In Salad

6 cups fresh broccoli florets
1-½ cups cubed cheddar cheese
1 large red apple, cubed
1 cup coarsely chopped pecans or walnuts
1 small red onion, chopped
½ cup red wine vinaigrette (try Brianna’s Blush Wine Vinaigrette)
½ teaspoon lemon juice

In a large salad bowl, combine the first five ingredients. Combine vinaigrette and lemon juice; drizzle over salad. Toss to coat. Serve immediately. Yield: 8-10 servings.
