Oh my gosh, I have a pork tenderloin in the crockpot this morning. So funny.

I top it with onions, garlic and bay leaves. I sometimes flavor it with a bit of Worcestershire sauce or Teriyaki sauce.

I think I will make garden mashed potatoes with garlic and kale too, and another side.

My DD has come down with a nasty little headcold. :( She's home from school so I made a pot of my "Magic Elixir Chicken Noodle Soup" with fresh organic chicken and broth, whole wheat pasta, mixed veggies, pearl onions, and spiced up with curry, garlic, sea salt, coriander, turmeric, and ginger. It's really good. I baked chocolate chip cookies, so we had soup and cookies for lunch. For dinner, I'll heat it up with some homemade bread. I've been baking up a storm lately!

LOL!

Yesterday I made a batch of breakfast burrito filling, then used the last of the garden potatoes to make potatoes/green beans and bacon. I also whipped up a batch of confetti muffins (filled with fresh green peppers and grated carrots).

Tonight is leftovers. We are building up more, plus they eat the breakfast burritos for after school snacks too.

Nicole, that sounds amazing!

I am torn between salmon wraps and eggplant Parmesan. It depends on how Ric is feeling (he has been under the weather most of the week).

It's beef stew tonight. Can't decide if I want to make a regular stew, or an Irish version I pulled out of a teen magazine when I was eleven. Yep, still have the page. It's pretty good, kind of a creamy version with peas.

Tonight it's my last quart jar of pepper/mustard sauce over chicken, fresh green beans.

Last night I made stuffed green peppers, so I'm happy for an easier night in the kitchen. Pssst....photos of it on my blog today.

Oh, Kristina, stuffed green peppers sound divine! Great idea!! And I bet that pepper mustard sauce was good over the chicken.

Tonight I've made one of my favorite simple casserole dishes: baked ziti. The one I make has pasta, sauce, ricotta, mozzerella, and spinach. It's baking now.

Kristina, could you post the recipe for your pepper mustard sauce? That sounds right up my alley, & hubs loves mustard. I remember spending hours on a potato dish with layers of herbs of all kinds, & mandoline sliced potatoes, all carefully put together with various oils etc & baked to deliciousness. Hubs promtly took out the YELLOW MUSTARD bottle & doused my creation. I still bring that up & I guess I now know not to come between hubs & his mustard.

We got a cold snap so yesterday evening after apple picking I made a pot of chili. Not sure yet what we will have tonight yet, but it will end with apple pie! :)

Didn't make my pie yesterday, so making it tonight with DD. It's "Mom's Diner" tonight: Homemade apple pie, Meatloaf with brown sugar top, mash potatoes (gonna mash blue ones) and carrots and broccoli, steamed. Comfort food all the way!

I'm making an easy recipe: take sausage (I am trying the natural brand Al Fresco chicken and apple one). Slice it up into "coins" and put in a shallow baking dish. Sprinkle with brown sugar, and bake at 350 until the sugar melts and caramelizes. For a side, I am trying a new dish, since I found organic butternut squash. It's got cubed squash, onions, oil, sage, and cranberries. Smells good...let ya know how it goes.

What are y'all doing?

Tonight I'm going to clean out the fridge of all the fresh veggies that are left and make up a veggie stir fry! Great way to use up all the odds and ends! For a twist I'm going to attempt a new recipe with a peanut sauce for it.

AlyssaMarie, what a great idea! I'd love to know how the peanut sauce recipe turned out.

DH made dinner tonight: traditional Danish food: frikadeller (meatballs in gravy), kartoffle (potatoes), and dansk rodkraut (pickled red cabbage). Nice to come home to a hot meal. :)

Oh, and the recipe from yesterday was good. I think it could work with any veggie, though, not just butternut squash.

Our peanut sauce last night wasn't bad at all. it was rather simple just wisked together some natural peanut butter (no sugar or salt in it) plus some sesame oil and low sodium soy sauce. The recipe called for garlic and hot sauce but I had already sauteed my veggies in some oil that I'd added garlic and red pepper flakes to so I left that out since I felt the flavors were already in the pan. It turned out nice and was a great use of all my soon to be old veggies that were in the fridge. Today I'm feeling kinda under the weather so I took some stew and biscuits I'd made a couple weeks ago and we'll just thaw and reheat tonight. My homemade version of "fast food" hahaha!

I just went out to the garden and pulled up some beets, carrots and radishes. Already had some squash and zucchini and kale picked. Cut it all up with some onions and mushrooms. Tossed it with olive oil, fresh thyme, salt pepper and garlic salt. It's in the oven roasting now and smells so good. Everything but the onion and mushrooms came from here. Yum!

Making something I haven't made in awhile. I've pulled out the kitchen issue of MJF and making a Bakeover in my cast iron skillet... YUM! Then I'll need to order more Budget Mix from MJF! I found the last of the box I ordered a while back, but there's enough left for one more meal. :)

Lisa, I was gifted the mustard sauce but will see if I can get the recipe.

Tonight we are having a chowder with corn, potatoes and turkey sausage. I am baking a loaf of banana/applesauce bread with chocolate chips too. Man it smells so good too.

I'm making a self-sufficient and healthy chicken crockpot meal. Garden carrots for a side. If the chicken recipe is a keeper, I'll post it on my blog tomorrow.
