                      | Sorry I missed the post a few days.  Tonight was nothing glamorous at my house - organic chicken hot dogs eaten quickly so we could catch the $2 movie at the town hall theater.  Hope all is well at your houses...been too hot to cook!

                      | Tonight I'm exhausted!  Been teaching camp classes all week.  I'm making chicken fajitas with a twist - I'm using squash cut into strips along with the pepper as I've got tons from the garden.

                      | The squash in last night's fajitas was amazing!  Will do that again! Also made a raspberry cobbler.  So yummy!  Tonight a friend is bringing her kids and pizza. :)

                      | At my house I am gettin' my farmgirl spirit in the kitchen:  making "Bridges of Madison County Cookbook" brown sugar meatloaf, red mashed potatoes, and tossed salad with home-grown lettuce, cucumber, herbs, and squash, with homemade buttermilk dressing.  Throwin' some buttermilk cornbread together, too.  MMMMMMMMmmmmm!

                      | We had breakfast for dinner - waffles and dippy eggs. Incidentally, if anyone is looking for a great waffle recipe, this one is really good - light and fluffy without the whole separating the eggs bit. If you like a crisp crust, just put them in the oven (directly on the rack) at 200* for awhile - most people do this anyway, to keep them hot, but leave them all in about 5 minutes extra and wow - so good! I haven't tried the topping, just the waffles, and as I rarely have buttermilk on hand, I just sour the milk with lemon juice and it works fine.                       | @Lindsey:  thanks for the reminder/recipe on waffles!  I have a really nice waffle maker that I have not pulled out in years!  For this weekend's dessert treat, I will make waffles with vanilla ice cream and top with fresh raspberry jam! 
 Last night I made a "Bakeover" but need to remember to order some more of MaryJane's baking mix...I'm out and it makes an easy meal so much easier!  Tonight I am throwing a pork roast in the oven with fresh garlic and rosemary (love the way it smells when cooking), and a squash casserole, and a cucumber salad with sour cream/buttermilk dressing.

                      | Tonight was french toast that I finished off in the oven with local maple syrup and bacon (I think I was just as excited to get a cup of bacon fat for future use!).

 Last night DD had a sleepover at her best friend's house, so I was set to make a small meal on the grill for DH and me.  However, my DH surprised, came home early from work and took me out to eat!  It was a nice surprise and our dinner was free since we used a gift certificate that someone gave us.  :)
 
 Tonight I am making Danish food: Boller  I Karry (meatballs in curry sauce) over organic rice and beets.  :)

                      | I just made Chicken Strudel. Got the idea from a fictional cooking mystery book my dad just read.  I didn't like the ingredients the book had in it's recipe, so I just shredded some pressure cooked chicken that had been seasoned with garlic and onion.  Then rolled out some Puff pastry into a rectangle.  Put a strip of the chicken down the center, added some VegAll and a small bit of chicken gravy.  I then cut the sides of the puff pastry into strips and folded them one over the other to made a "braid".   Cooked this in the oven till the pastry dough was cooked through.  Served it with mashed potatoes and more chicken gravy.   Yummmmmm..... It really was just a glorified chicken pot pie. 
 Life's too short to sit in a box all day.  Get out and do something creative.
