I'm going to make a quick pantry casserole using what I have on hand because tomorrow I go grocery shopping... I'm going to brown some venison hamburger, shred a few potatoes and twist in a cloth to get the extra starch out, throw in a can of kidney beans, some frozen green beans, some frozen corn. I haven't decided if I'm going to use some beef broth, spaghetti sauce, ketchup or bbq sauce as a "binding sauce" to bring it all together. Once I'm actually putting it all together I think I will do what feels right then I'm going to put it all in the oven for about 30-45 min at 350 and voila! pantry dinner casserole.

Baked seasoned fish with a salad and "fire potatoes." I'm also making up a batch of cornbread-dh and ds love it with their fish...bon apetite everyone!

Saturday night I made my homemade "chicken nuggets" (baked organic chicken, dipped in hormone free butter and soy sauce and coated in crunched up sesame sticks) and organic sweet corn. I also baked 2 loaves of zucchini bread.
Sunday I didn't cook.
I spent most of Sunday outside cleaning out my front (small portion of what I have yet to clean out) flower bed. It will feel so good to sit on the porch and see it so nice and tidy.

Sorry...missed Sunday, family day. Tonight I am making "Brown Sugar Meatloaf" from the Bridges of Madison County Cookbook, mashed potatoes and a salad with homemade lemon dressing.

Last night was pasta and shrimp. No idea yet what tonight will be; the Mister's appetite varies so much, and I'm so stressed out I don't know if I'll be able to eat anything at all.
Tonight - PB & J Tomorrow - homemade crockpot sloppy joes and sweet potato fries (baked) on the agenda for another night - Chickpea Stuffed Shells. Yum!

Aaack! On the run all day...forgot to change the date. Letting the kiddo pick tonight's dinner so I am making: grilled greek-style chicken breasts, mac and cheese, and broccoli.
