I remember seeing this recipe in a Cluck at some point and thinking it looked delicious - then I forgot to print it and forgot which cluck. I was so glad to see it in the e-mail!! Plus my hens just started laying again...

I only went to one store, but they didn't have 1/2 pint wide mouth jars. I don't have any that size. Hmpf....I guess I'll have to try another store on Friday.

This recipe is soooo good! I saute onions and mushrooms and put them on top of the spinach before adding the rest of the ingredients. I love it because I can make a bunch of them and my husband and I can eat them for days!
I made that recipe for December 28th breakfast . . . our 43rd wedding anniversary. Had Twelfth Night Scones and mixed berry smoothies to go with. I just dug short squatty salsa jars out of our glass recycle box and cleaned them up really good and used them. I don't have jars like that either. They were YYYYYUUUUUUMMMMMMYYYYY!!!!
AND, they were only part of one of the breakfasts we were served at MaryJanes Farm this summer on our road trip. I'll make them again. CJ

Thanks for the tips on adding more goodies to the jars. I don't have short wide mouth jars, but will continue to search for them. I even looked at a thrift store and a Wal-mart....no luck yet.
Made these again for breakfast yesterday for hubby and me. Put in sauteed mushrooms, onions and poblano chile peppers. Used plain yogurt instead of the cream. Freshly ground pepper (mixed peppercorns) and freshly ground garlic seasoned sea salt. Baked them in the small, clear glass Pyrex baking dishes. YUM!!! CJ
