Good Morning ladies!

My name is Cate and I was wondering if you can use the pressure canner for all of your canning needs? I am buying equipment right now and do not want to buy a water bath canner if I don't need to. I am looking at a 30 quart American Pressure Canner right now. Please let me know. Much to ask you all but for now I will leave it at that. Thank you in advance for your help.

Yes..your pressure canner can sure be used as a water bath canner too. Just don't "lock down" the lid! Any big pot that the water can boil above the tops of the jars will work as a water bath.
And hey..welcome to the group Cate!! Sounds like you are already doing farmgirlish things..isn't canning fun?? This time of year there is always a big waterbath pot sitting waiting on the stove top and boxes of jars and lids and canning gear waiting at the ready in my laundry/sewing room..I love this time of year! I am glad you found us!

To be honest I do not know. I searched a few websites and did not find a direct answer. So I am going to guess here based on my canning expierence, I would say you can, but may not want to do to the higher and longer heat exposer it would probably make all your fruit mush. So instead of having peaches you would have peach sauce etc. But in all honesty, I am a BIG fruit gal and canned fruit and jellys and preserves and such so all my canning was water bath method. The Ball book on canning may tell you, but since mine is in storage, I am not sure. Sorry I could not be a better help!

But I would like to give you a BIG farmgirl welcome!! Seems you sliped in the back door and we didn't notice! If you get a chance please start a new topic in the welcome wagon section so we can all drop in and get to know you better. In the mean time, I am so glad you found us and hope you enjoy it here even half as much as I do!! I look forward to seeing you around and getting to know you better!

You can, can all things in the pressure cooker. Thats the way I used to do all my fruit and veggies. It does make the fruit more cooked ,but not mushie.This is under pressure that im talking about not water bath.
In the Ball or Kerr canning books, it tell all the times and pressure that you need to know, and how to put the stuff in the jars to.
I do open kettle my fruits now, even though it does take longer,but I like the taste of the fruit better, not as cooked

Hi Cate,

I agree with Jenny & Shirley. Bought a big pressure canner/cooker last year to replace my old one and I've done both in it. I was a canning maniac this past weekend!!

Anyway - Welcome to the forum. Canning is great fun and productive too.

I haven't canned since I was a kid/teen but you can use it that way. Mostly I just wanted to say welcome to the forum and I hope you have fun here. Please go to the welcome wagon and start a new topic so everyone knows your here and can give you a nice proper welcome.

I canned this week too, I lost my boiling water kettle somewhere along the way so I used my pressure canner, and it worked just fine. The only thing I noticed about it is that on my pressure canner, the sides are not quite as high as the boiling water bath canner, so I can do pint jars in it but can't get the water high enough to completely cover quart jars.
