What do you all do with cake mix? I love making cookies with cake mix, and the "Diet" cake where you take a can of soda and mix it with the cake mix and then bake...what else do you do with cake mix? I'd love some new ideas!

I mix cake mix with a can of pumpkin and voila, pumpkin muffins :) I also like to make cookies out of cake mix. I've done coffee cake with regular old box cake mix, and I also did a super sweet cobbler type deal with box cake mix. One time I did the jello cake thing with cake mix where I just made a regular cake then when it was done cooking I poured the liquid jello over it and chilled until it was all done. It turned out pretty good. I make root beer cake with the soda can:) Oh, it is super good if you use like a lemon lime soda and then make sparkling jello and do the jello cake thing. It's a lot of fun to experiment!!!

You can make any flavor of cake from a cake mix you want, just by adding a different extract than vanilla. I usually use a homemade coconut extract (Alton Brown, Food Network website). I also love to make a shaped cake by baking the cake in a round metal mixing bowl (Sandra Lee, Food Network Website - Easter Bunny Cakes). Yesterday, I made a pumpkin shaped cake that way with a yellow cake mix. In order to get phenomenal results, I use 1 c water and 1/2 c oil instead of what the mix directions ask for. The three eggs will stay the same. I also added a pinch of pumpkin pie spice and orange food color. You can do either straight orange if you have it, or combine red and yellow. I had some pink, and when it worked up with the yellow, it made a nice pumpkin-y orange. I used the same combination in some storebought frosting to decorate. We've done the bunnies like Sandra did for birthday cakes for both kids one year, and I've done Pokeballs for two different birthdays for my son. Both times we used the coconut extract and a white cake.

And like Krystle said, you can look up all kinds of recipes online for what to do with a cakemix. There are also several books available (try library and/or Amazon):101 Things to Do with a Cake Mix by Stephanie Ashcraft , Taste of Home: Cake Mix Creations: 216 Easy Desserts that Start with a Mix by Taste of Home, and my favorite, The Cake Mix Doctor by Anne Byrn.
