Jonni, here it is :)

This recipe is used throughout the year because it's so good! In fact my husband has requested it in place of a Birthday Cake this year :)

I hope you all like it :)


Honey Pumpkin Pie

2 cups fresh, cooked, mashed pumpkin (or 1 16 oz. can)
¾ cup honey
1-teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
3 eggs
1-5 1/3 ounce can (2/3 cup) evaporated milk
½ cup milk
Pastry for a single crust pie

In a large mixing bowl stir together pumpkin, honey, cinnamon, salt, ginger, nutmeg, and cloves. Add eggs. Mix well. Stir in evaporated milk and the milk; again mix well.

Prepare the pastry. Fit into a 9-inch pie plate. Flute edges forming a high rim to hold the filling. Do not prick shell. Place pie shell on oven rack; pour in filling.

Bake in preheated 375 degree oven for 55-60 minutes or until the pie is set. Cool before serving.

I have started using Baking Spice (recipe follows) in place of the above mentioned spices, it seems to give it a little boost :)

Baking Spice

6 Tablespoons ground cinnamon
1 Tablespoon ground allspice
1 Tablespoon dried orange peel
2 teaspoons ground nutmeg
1 teaspoon ground cloves
1/2 teaspoon ground ginger

1) Combine all ingredients together. I have a coffee grinder just for spices so this is what I used.
2) Store in an airtight container.
3) Use this mix in recipes that call for the ingredients above.
4) If a recipe calls for the above spices, add up all of the measurements and use the same amount in your recipe.

Makes about 1/2 cup.

Thank you so much! This looks delicious. I'm using pie pumpkins this year since we found them for cheap at a local veggie stand. Of course, I'll need to try it out before using for Thanksgiving. My boys will be thrilled! They love their pies.

I've been looking for a pumpkin pie recipe. This one looks good. I'll give this one a try.

Sharon- thank-you for this Baking spice Recipe. I am going to make up a batch and use it when I make plain oatmeal, homemade granola, and other recipes using that basic fall flavor spice mix. You pie sounds yummy as well!
