How long do you bake them, and at what temperature? I am making pumpkin puree to make pumpkin butter. I don't have a steamer to steam them and I don't want to use the microwave. I appreciate your help.

Every pumpkin is going to take a little bit different time frame I just watch and poke then to see when they are done.

I cut mine in half, scoop out the seeds, lay cut down in a cake pan, add about 2 inches of water, and bake at 375*. I start checking them about 45 minutes or so by squeezing the pumpkins feeling for soft squishyness.

I also let them cool in the pan cut side down so they don't dry out. Then scoop out pulp into a strainer and let drip for about 30 minutes. I find my pumpkin pulp just comes out best that way.

You can also put them in a bit of water in the pan. That does "steam" them in the oven. But yes, Diana is right--the bigger, the longer it takes.

I put them in a pan in the oven, covered with foil, and a bit of water. I did use 375° and it took about 1 1/2 hrs for 5 pumpkins at once.

I now have it reducing away in the crockpot for pumpkin butter. Thanks! I can't wait to try it.
