Had goose this evening for supper. Wow that is good meat. I'm also marinating some right now to make jerky and now that I've tasted the meat I'm very excited about how good that jerky might be.

Does anybody have any succulent recipes for goose they might be willing to share? I was raised on wild meat and have had everything from buffalo, moose, elk, deer, bear....... The goose reminds me a bit of buffalo, I think it would be easy to overcook because there's zero fat. I'd like to figure out some fantastic meals since my husband is a foodie to the extreme.

You are making my mouth water! I have never had goose before but now I am wishing I had one to cook! Absolutely love buffalo meat...one of my favorites! It can be a bit hard to find sometimes- but it tastes so rich and yummy!

Buffalo and elk are my favorite..... well actually the best meat I've ever had was the backstrap of a mountain sheep.... but to have on a regular basis it's the buffalo or elk. Right now buffalo prices are through the roof, I can't afford it and I'm allergic to beef so it's not an option for me. That's why I was so excited when the goose was so good and I got a bunch GIVEN to me!!!

I've been debating getting a pair of geese to breed... this is NOT helping me decide not to! LOL!
