Hey girls,

Just thought I would post this here. it's really good and we love it on a grilled english muffin.

Tomato Jam

3 pounds fully ripe tomatoes
¼ cup lemon juice
1 package powdered fruit pectin (I usually use Sure-Jel)
3 ½ cups sugar

1)Scald, peel, core and quarter tomatoes. Squeeze out seeds and juice reserving only the pulp.
2)Bring to a boil, reduce heat and simmer for 10 minutes, stirring frequently – uncovered.
3)Measure – you will want 3 cups of pulp
4)Place pulp, lemon juice and pectin in a large stainless steel pot. (or enamel)
5)Bring to a full boil stirring constantly.
6)Add sugar and boil rapidly for another 2 minutes
7)Cool for 5 minutes, stirring often
8)Ladle into clean, hot jars leaving ¼ inch head space
9)Process for 10 minutes at altitudes up to 1000 feet


Yield: 4 half-pints

Nicole,

It is sweet with a little bit of tomato flavor. I had never heard of it before my husband. He told me that his mom used to make it so I had to try it. It's hard to describe, I guess if you didn't know what it was when tasting it, it would take awhile for you to guess :)

Hey Sharon,
I wish our tomatoes were producing like they used to . . lots and LOTS of them! But they're not!
And, I don't know that I have time to make jam.
Someday I'm gonna try this!

I love tomato jam. Made this one a couple yrs ago and hoping to make more this season. Very easy and tastes like whatever jello you use. My adult kids loved it http://allrecipes.com/recipe/budget-berry-jam/detail.aspx.

This sounds wonderful! I want to try it. Too bad our tomatoes are almost through producing for the year. I'm printing this out and putting it with my planting notes for next year. Thanks!
