Hi I got a little crazy growing peppers and one variety I have a lot of is jalapenos.
Looking for a freezer jam recipe or maybe pickling recipe I don't know anything about pickling.Do you use a canner? I don't have a canner.

I canned Cowboy Candy (Candied Jalapeno's) for the first time this year. I can't leave them alone! They are great! Check this out http://www.foodiewithfamily.com/2010/05/23/candied-jalapenos-cowboy-candy/, this is the recipe I used, it's easy. I used a water bath canner for mine, but I think you could but them up without, because I have a zucchini relish recipe that is similar & you just let them self seal & it always works ok. The recipe says to let them sit for 2-4 weeks before eating. I couldn't wait & tried some within a week, they were good, but they get their crunch back around 4 weeks. I don't think you will be disappointed!

This is what we do with ours-Pickled jalapenos, Dehydrate and grind into powder for seasoning, Jalapeno Salsa (in the Ball book), add to dilly beans or pickles and this year we are going to fire roast and then pressure can them. Also don't forget you can make poppers and freeze them. Yes we grow alot of jalapenos too! |

I made awesome jalapeno jelly using the plain, old recipe in the Ball blue book. DH and I have been eating it like crazy with creamy blue cheese and crackers.
Also, I LOVE Pioneer Woman's jalapeno popper recipe. You can pre-assemble them (up to wrapping them in bacon) then freeze on a cookie sheet and transfer to a freeser bag and freeze. Then, come holiday time, you'll have a ready-made appetizer and snack. Just defrost, brush with the sauce and bake according to the directions.
