My son wants to know if you can can pickled eggs. His new hens have started laying and the eggs are about the size of golf balls. To small to sell,so he wants a recipe for pickling them also. Can anyone help?

You can't can them, but once they are pickled they last a long time in the refrigerator.
Here is a recipe I use that my husband loves:

You can also save the left over juice from dill pickles and put the eggs in that juice to cure. We find if you poke tiny holes with a sterilized needle, the solution gets into the egg better.

Pickled eggs are a staple at every bar in Wisconsin!

Actually I found a recipe somewhere for canned pickled eggs and had them on hand for a while. decided they weren't my favorite so haven't done any since. Might be in one of the ball books, I can't remember because it's a been a few years.

You might want to go through your books.

I've been saying that I need to pickle eggs but I'd never done it before. I love pretty much anything that's pickled. So these are eggs that are still in their shell and you just boil them for the milly second before putting them in the jar and pouring in the pickling recipe, correct? They're not hard boiled eggs? That sounds easy enough. I'll have to try it and see if my family enjoys them.
