I have some potatoes that I need to use up, and I want to make potato soup. It's very basic -- diced potatoes, carrots, celery, onion in a broth. I don't add the cream until it's heated up and ready to serve. Can I freeze the (non-creamed) soup? I've never frozen anything with potatoes before.

I've done it, but I can honestly say I don't recall how it turned out--I'm just not a huge fan of potato soup, afterall!!!

I do know this--if you wanted to use up your potatoes you can make awesome mashed potatoes, those freeze beautifully! Just make them like you do when serving fresh--cream, butter, seasoning, etc...put them into containers and wham! Mashed potatoes when you come home to add to any dinner.

Thanks Jonni, for sharing the tip on freezing mashed potatoes. I diced the last of my garden potatoes, blanched them and froze them in bags. I really like the idea of freezing some already mashed.

It's great for coming home on a cold night and having something "already done" so you can focus on the other parts of your meal. My favorite (and my dh's, too!) cold weather "quickie" meal is called "Hamburger Splits" that came from this old soda fountain where my mom grew up. I keep a LOT of mashed potatoes on hand for that alone...make a hamburger, put it on a bun. You can add cheese if you want, but I like mine plain :) Halve the hamburger (on bun) in two, put a big ole' dollop of mashed potatoes in the center and cover the whole thing with a nice drizzle of beef gravy. Comfort food at its best!
