This might be a weird question, but I have a ton of Tomatillos and I want to make a salsa with them, but the salsa is more of a creamy textured salsa, blended smooth with the addition of a whole avocado.

Since I have a crap ton of these tomatillos, I planned on making multiple batches...do you think it would freeze?

Here's the contents--do you see anything that wouldn't freeze well?:

8 tomatillos
1 avocado
2 serrano chili peppers
3 cloves garlic
1/2 juice of lime
fresh cilantro
salt

(Blend all in processor until smooth in consistency)

My suggestion would be to make the salsa, omitting the avocado. When you want a batch, thaw the tomatillo mix, add the fresh avocado and blend in the processor. Avocados are more or less an "eat it fresh" fruit, so it seems the salsa would be better flavored and would get a little fresh-made zing from it.

When I was out in California last year my sister got this wonderful salsa stuff at the farmers market in Torrance. It was chunky with avocados in it. I could have sat down with a spoon and eaten a bowl full every day, the best I have ever had!

I have frozen avocados before (years ago when I had a tree in Calif) the key is to get it coated with lemon juice and get all the air out. With the acid from the tomatillos and lime in your recipe I would think it would be fine. I would use a food saver bag or zip bag with ALL air sucked out though..not a jar or other container. Maybe try a little bit and leave it in freezer for a week and see what happens when you thaw it???
