Me too Jenn! Lordy, what was I thinking when I planted six plants! I've sold a few, but have tons more than I can possibly use. So far we've used them diced in soups, curry and even spaghetti sauce. They absorb flavors so nicely. But I'd really like some new ideas too... |

Hmmm sure they would be good with curry. Found an eggplant with garlic sauce recipe but calls for a lot of asian condiments that I don't keep on hand. Think it is kinda silly to buy all that stuff for one seasonal dish. Well hopefully someone out there has ideas for us.

mostly when I make eggplant it is in these dishes: baba ganoush ( baked whole eggplant scooped out, mixed with tahini, lemon juice and garlic then use pita to dip) ratatouille (a french vegetable stew with chunked eggplant, zucchini, onion, peppers, tomatoes and garlic) I make that when I have too much of everything coming in from the garden, it is dinner with a loaf of bread. eggplant and sausage with pasta ( saute italian sausage sweet and hot, bake chunked eggplant in oven tossed in olive oil and garlic, boil a mouth size pasta, when all are done toss together and add fresh grated parmesan cheese) My favorite though is still eggplant parmesan |
