Donna, I have a recipe (that's for the autumn) that gets rave reviews whenever I make it--especially from my husband! The only thing that I do differently from this recipe is I use ground sausage as opposed to the sweet Italian. On occasion, I also use Madras Curry to give it a kick, but it's an amazing recipe and it's such a "hello" to Autumn!

I've used butternut squash in place of pumpkin in lots of my recipes - pumpkin bread, pumpkin pie, etc. It's not quite as strong in taste to me so I up the spices. Also, last time I made pumpkin butter, it was about half butternut squash.

Also, I keep reading about that cake or brownie recipe that only requires a cake or brownie mix and one can of pumpkin but I haven't tried it yet. Wonder if this would work with butternut squash?

I made a zucchini crisp(instead of apple). It really was fabulous, & the squash was a very wise apple substitute.
It was gone in a day.
