Ok, Missy has a great sounding pasta recipe that I think I might try. What else do you feed hungry working guys when the temp soars into the 90's? We've done potato & cold pasta salad variations pretty often, but I need some ideas for other cool suppers. What's for dinner ladies?

I have been using my crock pot alot...We have been doing vegetable soups, stews, beans etc... It doesn't make the kitchen so hot! Tonight, my husband is working late, he works for the power company and when it is so hot there are alot of outages, so guess what the kids and I had for dinner? Watermelon and rootbeer floats! If it is just me and the kids I serve my very favorite...cottage cheese with tomatoes! I do alot of "chef" type salads in summer time, and use the crock pot alot too. A few nights ago I put a pot roast in the crock pot and cooked it all day on low and then made french dip sandwiches...on french rolls..yum and watermelon for supper.

I'm so happy to hear that there are people other than I who have been suffering from too much heat in the kitchen!!! William and I had grilled tomato, basil and cheese sandwiches for dinner with cottage cheese on the side (Jenny - I LOVE tomatoes and cottage cheese, too! I put dill on top...). I made it in the toaster oven so it wasn't so hot, but really, what I wanted was what Kate had for dinner!!!!!![](icons/icon_smile_wink.gif)

We grill outside (usually chicken or steak, or shrimp kabobs) and pick up some locally made sliced brisket from a BBQ place. Serve it with grilled corn on the cob, beans, thickly sliced tomatoes, cold salads and chilled fruit. Or we take the grilled meats and make fajitas out of them. Serve with grilled onions, peppers and cold sour cream and salsa.
The leftover meats can be made into some pretty nice dinner salads. Add a couple of cups of diced meats on top of a green salad, top with cheese, crisp tortilla strips and dressing and yum!

I didn't even think to say that when we make chef salads we use either left over bbq chicken or steak. We grill outside all year round but especially in the summer. ooooh fajitas sound so so good right now.

This comes at a good time for me. My daughter and son-in-law are redoing an old home. I take care of her 4 month old baby and 3 year old---I've been trying to prepare their dinner and it is so hot, they like cool dinners when they are done for the night.....Well, you have given me idea already.
I do some caseroles and they heat up what they want in a microwave...salads. All ideas are appreicaterd.
Side-Bar: My son- in - law has lost lots of weight during these 3 months---my daughter has not lost that much. I'm thinking I need to switch jobs and work on the house. Losing weight that quick sounds good, but the sweat, hours and hard work gives me pause !!!! :)))
Seriously, I know that you farm girls have done all type of hard work...Any suggestions for me to make it a little earier for my daughter. I would appreciate them. (maybe this should be under another topic? If so, I am sorry |

How about cold cereal for supper?! Just kidding...sort of :) The other night, when it was once again 100 in my kitchen (without the oven being on), we had stuffed baked potatoes for dinner. I did the potatoes in the crock pot for the first time and they were great! I just washed, pricked and wrapped in foil. Cooked on high for about 3 hours. I had two layers of potatoes (cooked 8) and they all cooked just fine. I doubt I'll bake them in the oven again; maybe in February! Stay cool, or at least try, Sharon

The other night we had cold tomatoe/mozzarella ball/black olive salad (isn't this called caprise salad?), with hummus, spinich dip, crackers, cheese and salami. Then last night it was fruit salad and cold sandwiches made on crossants. Tonight might be out to dinner and a movie to stay cool.

If you have access to tomatoes, try a tomato sandwich. Seriously.
slice of tomato salt peeper to taste mayo bread voila!
I personally can't stand mayo, so I use mustard. And for extra crunch, pile chips onto the sandwich too |

Tomatoe sandwiches are my sweeties favorite. I have embelished on them. I love Muenster cheese so I add it to my tomatoe and mayo sand wich. I guess any cheese would work. Also try toasting the bread and putting cream cheese,spinache leaves ,tomatoes, cucumbers and green or red peppers. Kind of a salad sandwich. I microwave alot in the summer. Last night we grilled inside in the air-conditioning. We had steaks on the foreman grill! I don't know how you guys are surviving in the 100 + degrees without air!!!! We have air here,but did not have it in OH. I remember a few REALLY HOT summers,but nothing like it's been. God Bless all of you guys and your poor hot little ones. Maybe soon it will cool down!! I made a brisket in the crock pot. I think the recipe came with the new pot. Just salt, pepper, garlic powder or any seasoned salt and some liquid smoke (forgot I had that!). Wrapped in heavy foil and cooked on low all day while at work. Pretty yummy. Just served with a green salad.
I also try to cook chicken, steak or whatever on the grill and make salads. If you like beans- I make one with white beans, basil, chopped tomato, some chopped olives, salt, pepper, olive oil & a splash of balsamic vinegar. You can really put in just about anything.

Oh - and Anna,
I am so onboard with chips on any sandwich!!! I try not to keep them in the house, but have always loved putting chips on sandwichs, except of course PB & J. That would be yucky.

Ok, here's one! DD fixed this for us last night.
Roast Beef & Cheese rolls Ham & Cheese rolls Fruit Salad
No bread, to make the meal heavy on the stomach. 1/8 inch slices of deli roast beef and ham were rolled up with a slice of either colby or swiss inside and secured by a toothpick. Fruit salad was made with blueberries, raspberries, apples, strawberries, and bananas and 1/4 cup organge juice (tossed) served in stemmed glasses.

We grilled veggies...eggplant, zucchini, yellow squash and Vidalia onions with garlic oil, and then grilled sea scallops. The only thing I did inside was corn on the cob.
My favorite lunch treat in this heat is to slice open a crusty roll, layer one side with slices of cheddar cheese, and broil it in the toaster oven until the cheese melts. Then I add a layer of tomato with garlic salt and italian seasoning, and a few pieces of fresh basil. Yum!

I'm all about peaches right now. Here in NH it's 115 degrees and I've been making salads.
Here is a hearty salad recipe that even the tough guys love!
Peachy Grilled Chicken Salad
Marinade 1 tbsp. organic olive oil 2 tbsp. fresh lime juice 1 tsp. fine sea salt 1/2 tsp ground pepper 4 small grain fed chicken breasts
Whisk olive oil, lime juice, salt and pepper in a large bowl, add chicken and turn to coat. Marinate 30 minutes turning occasionally.
Prepare grille or barbeque pit and grille chicken. I
n the meantime, add in a bowl, 4 tbsp. Olive oil, 1/2 tsp. sea salt, 1/2 tsp. pepper and mix with 2 minced green onions, 1 finely chopped shallot, 1 1/2 tbsp wine vinegar, 2 tsp. fresh thyme, 1 tsp honey mustard and blend.
Add 2 cups sliced peaches, 1 cup diced avacado and spring greens (raddichio, dandelion leaf, spinach, watercress). Mix to coat in dressing. Slice grilled chicken into thin strips and add to salad.
This salad is bursting with sweet and tangy flavors, best served with fresh organic limeade or homemade lemonade.

I had the best thing yesterday that would make a great hot weather dish - it was a chilled Krab salad served on a bed of lettuce. Okay, Krab sslad is boring, right? Well, this one wasn't. They didn't use mayo in it and instead added a lemon dressing to the shredded krab, some diced green onion, a dash of either paprika or maybe Old Bay seasoning and a garnish of lemon, and chilled it thoroughly.
I'd love to find out what was in the lemon dressing - it definitely had fresh lemon juice and perhaps a dash of oil... no vinegar, but not sure what else. It was a tad bit creamy but that may have been due to using some kind of oil and emulsifying it.
Whatever they did, it was crisp, cold and very, very good.

I have a cute little red appliance that is like a folding grill. One side is flat and the other is ridged. It is supposed to be for burritos, I think, and I forget the name of it. But anyway I plugged it in last night and made grilled ham and cheese sandwiches. It doesn't heat up the kitchen like turning on the stove, and it doesn't get real hot, so I can do other things while the sandwiches are heating up, without worrying about them burning. It is non-stick and cleanup is very easy, just wipe it out. With the sandwiches I served a cucumber, radish and tomato salad. Sliced the radishes in the food processor, same with the cukes, and cut the cherry tomatos in half. Voila! dinner is served...
