Well, the onions are in and it's been good. Just thought I'd give a peek at how we Okies grow and process our onions for long-term storage. I posted a picture essay at the blog if you are interested.

I love growing and storing onions too. You have convinced me I need a dehydrator. I've made due with the oven but not for onions. Can't wait for mine to mature!

Connie, I just saw the coolest dehydrator online that is a net-covered series of racks that hang one on top of each other. You hang the thing from a hook outside and let the sun do the work without the bugs. I showed it to my hubby and I think he's going to try making one just to try.

Before Dad built my Mom a dehydrator, she used the station wagon we had back then. She would put her stuff on baking sheets and lay the baking sheets in the back of the station wagon with the windows cracked just a little bit. Things sure dried fast. (This was back in the '70's when the wagons were HUGE)

Mary Beth i found it on Amazon $2.00 cheaper. I think I can figure out how to make one. Problem is getting around to it! The mesh bag is an awesome idea. The roof too. That will keep falling dust out. I just have to figure out the frame and come up with some trays...

I know I know! Like I said the problem is getting around to it. The money I would save using the bought one, by the time I got around to making one, would pay for it!
Hum, think I'll buy one and just be on the look out for the "parts" for another when I'm out junking. Haste makes waste, I'm sure I'd spend more than I want to on parts if I rush.

Margo, thanks for the kind words. Yep, the market is just dandy if you can't grow your own! All a farmer's market is, is people growing their own so you can have it too! No different from your neighbor sharing his goodies with you. Next best thing to your own garden! Hope you get settled soon. :-)

I loved your idea about the small onions. I never thought to freeze them separate. I had to laugh about the dehydrating. I tried doing the whole thing indoors one year. I work in the basement and had the dehydrator in the kitchen upstairs. I came up for lunch and could not believe how strong it was. I now always start them outside. Thanks for the ideas...I also use the dehydrated ones in my own dry onion soup mix, since I like to make my own mixes

I tried starting onions from seed this year in the garden. About half of the row is coming up. The other half was squashed by Mabel the kitty because it was apparently a comfy spot to lay in. The one part of the garden where I didn't put a kitty barrier turned into a kitty bed.

Oh dear, Paula. Kitties are like that. You might try starting them in little pots next year and then transplanting so they are big enough that kitty doesn't like them! :-)
